I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

I have some exciting news for you guys: I am an official brand ambassador and Community Leader for The Laughing Cow along with 3 other amazing women, Roni, Sarah, and Katie.


I am really excited about this new role””obviously, because I love cheese, but also because I’ll be able to show you how I use products from The Laughing Cow in my daily life, recipes, snacks, and other pairings. Additionally, I’ll be contributing blog posts to thelaughingcow.com. Here are a couple of posts I’ve written so far:

  1. I love the Laughing Cow Blue Cheese flavor, I put it on my buffalo flavored wheat thins! I also love the laughing cow strawberry cream cheese, I like to throw some in my morning smoothie!

  2. I never ate Lauging Cow until two weeks ago when I saw you try it with raisins on a rice cake…now I’m hooked. I love the strawberry!

  3. The BEST lately has been the Gouda with salt and pepper triscuit crackers. Nothing tops that. Unless of course you add a little cucumber or a little tomato. Its so fresh and so light-I LOVE IT. A good go to snack!

  4. My fav is Bonbel but I’m in love with Original, too. Have not tried the others yet. I normally eat it like a snack sometimes with a cup of coffee.

  5. Love Laughing Cow cheeses. The light Garlic & Herb is one of my favorites and I made up a recipe for “Garlic mashed cauliflower” using it. So yummy. I make it frequently and have it with meals all week long. So creamy and healthy!

  6. Love the light Swiss with apples or crackers. Right now I am enjoying the cream cheese spread with banana bread!

  7. I love to pair the light Swiss cheese with gluten free pretzels or with nut thin crackers, sliced deli turkey, and cherry tomatoes. Loveee Laughing Cow cheese!

  8. The Garlic and Herb is my favorite. I can use it to make sauces for pasta, slather it on bread with a sandwich, or mix with salsa to dip with chips!

  9. I love to add the original or herb flavor laughing cow cheese to a quiche! It adds the perfect amount of creamy flavor to the eggs and veggies!

  10. I love the Light Queso Fresco & Chipotle cheese wedges on pressed turkey wraps! Yummy melted cheesy goodness.

  11. I like it with pepper jelly and crackers for a snack or cooked in with spaghetti squash and veggies for a good gluten-free pasta dish. I’ve had celiac since I was 2 so it’s been a go-to for snacking forever!

  12. I caved to the pressure of hearing all the rave reviews about Laughing Cow, and the Garlic and Herb is my fav! Spread on gluten free toast instead of mayo for a tomato sandwich – delish!!!

  13. I love the Light Creamy Swiss on Triscuits and the Garlic and Herb on a Pita for a turkey sandwich. So yummy!

  14. I’m a fan of the good ole Swiss variety. I love putting it on a tortilla with some turkey and apples and making a wrap.

  15. I love to add the Light Swiss Laughing Cow cheese to steamed broccoli. It makes a really yummy cheese sauce.

  16. My kids and I love chipotle and queso fresco spread with avocado on some really good fresh or toasted bread (not packaged sandwich bread, something like seeduction from whole foods 🙂 great combo! For extra protein, we sometimes add turkey, chicken, or egg.
