Even though I stopped taking photos of everything I eat, I still find myself snapping pics of my food. I guess it’s more ingrained in me than I thought. Apparently, 5+ years of documenting my eats will do that! Anyway, I thought I’d take you through some of the meals and snacks I’ve been eating lately.
Fresh raspberries with almond butter and chocolate & white chocolate chips – a very dessert-y way to eat fruit! I also tried this combo with fresh blueberries and strawberries. Yum!
Roasted fennel – OMG, obsessed. One of my vegan CrossFit friends gave me this idea, and I’ve been in love ever since. She calls them “fennel steaks.” To make them, just slice up a bulb of fennel, brush with olive oil, sprinkle with sea salt, and roast for 20-25 minutes on 400 degrees F. Amazing!
Chicken sausage with butternut squash and apples – totally threw this meal together and it turned out so well. Approximately measurements: 11 ounces sliced chicken sausage, 3 cups frozen butternut squash, 1 diced apple, cinnamon, nutmeg, and garlic powder to taste. To make: nuke squash in microwave for 5 minutes with spices and then sauté sausage and apple with a little bit of olive oil for 7-8 minutes. Mix it all together and enjoy!
Sautéed kale, radicchio, and onion with chickpeas – simple, delicious, and nutritious. I haven’t had radicchio in ages, so I picked up some at Whole Foods the other day. I just seasoned it with garlic and sea salt for some extra flavor. Perfect.
Coconut water – tastes so amazing after a hot, sweaty workout. I mix it with water and then CHUG it! The taste encourages me to drink more, so it definitely helps to hydrate me.
Whole Foods hot bar – my go-to lately. It’s been so hot and I haven’t felt like cooking, so I stop by Whole Foods and hit up their hot bar for lunch or dinner. It’s the best.
Blue Diamond flavored almonds – I’ve been living off these lately. Blue Diamond was a sponsor at Fitbloggin’, so the PR reps hooked us up with a bunch of the different flavors. The coffee, coconut, and salt & vinegar flavors are the bomb!! Seriously, I cannot stop eating them.
Almond yogurt with sliced banana and coconut almonds – I’m almond crazy! Did you know there’s now almond yogurt? Yup. Yogurt made from almonds. That’s nuts (ha!), right? I found it at Whole Foods the other day and just had to try it. It’s pretty darn good!
Homemade berry iced tea – my drink of choice lately. Just add frozen berries to homemade iced tea! The berries keep the iced tea cold and add a deliciously sweet and fruity flavor.
No-Bake Cookie Dough – love this stuff. You guys saw this recipe on CNC the other day, right? If not, it’s gluten-free and egg-free cookie dough you can make in minutes and eat straight from the bowl. It’s incredible!

Lots of pancakes, peaches and blueberries…and cherries and the usual copious amounts of raw white cashew butter!
I LOVE having a handful of blueberries in almond milk with almond or peanut butter. Sometimes I might throw in a handful of cereal or granola but even without, it’s like a healthier but still tasty version of cereal. 🙂
That roasted fennel looks delicious! I never thought to do that, I usually just chop it up and put it in salads. I’m not eating any one thing that stands out these days. One of my goals for the month is to plan my meals more, so hopefully I can come up with some good stuff!

Good idea about the coconut water and half water. Coconut water is expensive, but it might help to split it up. I find it very difficult to want to drink water and end up eating stevia to it all the time — that’s expensive too!
The butternut recipe, is that one serving? I’m really an emotional eater and have no idea about portion sizes, so if you can give me an idea, it helps. Like I really don’t know. I’m an all or nothing girl.
I’ve seen almond yogurt around but prefer to just pick up regular greek yogurt (less ingredients and recognizable ingredients and protein unlike the almond stuff).
Do you keep your nut butters in the fridge? I always have but maybe your not supposed to?
I love the sound of those fennel steaks—yum! I’ve been eating a lot of watermelon lately, mostly in watermelon feta salad. And lots of veggies & hummus and various other snacks for dinner, because it’s too hot to cook.
I wish we had Whole Foods here. I love their hot bar.
I have been eating lots of Greek yogurt and almond butter. Not too exciting but delicious. It has been so hot out figuring out what to cook has become tough too, so lots of wraps, sandwiches and green smoothies over here!

I’ve been loving homemade iced tea too. I find it tastes so good when you make it yourself. And it’s cheaper to which is a great plus.
I’ve been eating lots of smoothies and salads since the heat has been nuts.

I am OBSESSED with the coconut almonds. I keep a little bag of them in my purse and a can in my house at all times. And speaking of almond yogurt, did you know there is also almond cheese?! I found it at Whole Foods and threw a fit of joy. It’s very good, AND it contains a hefty amount of protein + fiber, so I don’t feel guilty covering homemade pizza/sweet potatoes/eggs in it. 😉 Hooray for almonds!

Thanks so much for the fennel idea!! I also recently started eating it when I was doing a “no sugar boot camp” in May and fennel was the star in one of the recipes. I surprisingly really liked it, but sometimes eating it plain turns me off for some reason. I can imagine roasting it would be delicious!

Lately I’ve been obsessed with brussel sprouts as the center of a meal. My favorite lunch I had three times this week is so simple: shred a bunch of brussel sprouts (I do a bag full and eat leftovers) the long way with a sharp knife in a hot pan with tbs. coconut oil – saute a few minutes and add in chopped walnuts and chick peas – continue sauteing until it seems soft to touch splash a little low sodium soy sauce on top if you have it – or a dash of balsamic vinegar and enjoy in a bowl. I love eating out of a bowl. You can improvise and put a little goat cheese on top to make is a little gooey. Anyway, it’s so heart healthy and keeps you full all day!

I’ve been snacking on honey roasted blue diamond almonds, I want to try the coconut and coffee flavours that you have. I’ve been eating lots of fresh stuff from my farmers market lately, zucchini, berries, carrots, etc.
Toasted coconut almonds?? cannot wait to try those! It has been so hot lately I’ve been craving lots of foods with water in them, including watermelon, beets, cucumber-all are so great on a hot day!

I have never tried fennel, only fennel seeds which I’m not super jazzed about. Might have to give it a try though.

It’s pretty high in sugar, but makes an awesome snack/dessert. It is so so good!!!
And Chobani is coming out with a new coconut flavored 6oz yogurt, can’t wait to try it.

My husband made a sort of vegetarian chicken parmesan for us the other day. It was made with spaghetti squash, homemade pasta sauce, Quorn chicken patties (http://www.quorn.us/), zucchini, and goat cheese. Soooo good.
I will definitely be keeping my eye out for those nuts and almond yogurt!
I’m so weird. When it’s crazy hot out, I end up making comfort foods and using my oven way too often haha. So I’ve been baking cookies and making things like chicken and dumplings. Weirdo! 😉
