Eats from the Week + Wins In the Kitchen Survey

Just wanted to share some tasty eats from my week…

Organic Edamame & Mung Bean Fettuccine (<– obsessed + need to buy more) with arugula and freshly grated Parmesan

Honey Mustard Tuna Salad (recipe below) with rice crackers

Honey Mustard Tuna Salad

Ingredients:

  • 1 can (4 oz) tuna, drained
  • 1/4 cup shelled edamame
  • 2 tbsp finely chopped red onion
  • 1 tbsp honey mustard
  • 1 tbsp nutritional yeast
  • salt + pepper to taste

Directions: Mix together and eat!

Fried eggs on top of butter toast and iced coffee with collagen

And since I’m on such an egg kick lately, I’m dying to make this Sweet Potato Hash with Poached Eggs. It’s definitely on our menu for next week as well as these Easy Smashed Potatoes!

Ok, time for a Friday blog survey! I recently saw this brief interview with Maria Menounos in Health magazine and it looked like a fun one, so here we go!

Eat food with a healing intent.” After abusing my body last weekend with booze and garbage food (hey, it was an awesome time, but I paid for it), I’m thinking about food a lot differently now.

HEALTHY-EATING MYTH

That healthy eating is black and white. A long-term and realistic way of eating is gray. All gray. It’s okay to eat kale salads and veggie omelets most of the time, but then decide donuts and mac & cheese are what you’re really craving. You can have them and enjoy (!!) them. You don’t need to be perfect to be a healthy eater. 

GO-TO INGREDIENTS

Right now, I’m digging nutritional yeast and hummus. Both make just about any dish more delicious and flavorful.

GET-OUT-THE-DOOR SNACK

Bananas! <— funny story. Usually, I’ll throw together a quick peanut butter and banana sandwich or a quickie smoothie with a frozen banana, chopped spinach, protein powder, and soy milk.

  1. Roast nuts, I have these handy little prepacked ones just brazils, pistachios, almonds and cashews….why are nuts so much more awesome when they’re just straight up roasted!!! Other grab and go snack if I have them ready are hard boiled eggs, I’m addicted! My go to ingredients at the moment…cauliflower EVERYTHING and turkey mince!!! Taco bowls on repeat!

  2. Mom’s best advice, “Always do your best and know that’s enough.” It reminded me to give my all to anything I was doing, but perfection is not the end goal.

  3. I started using collagen this week after reading about all of it’s benefits…I’m excited to see if the benefits are all that everyone is saying…so far, less muscle soreness!

    Healthy eating myth….granola is healthy. MOST granola is a calorie bomb.

  5. I am big on leftovers especially for a quick lunch. I try to make extra so I have them on hand for a quick meal. And who can live without frozen bananas? Essential for smoothies. I agree, healthy eating is a process. We need to learn what works best for us and our needs. And there are times when our needs change.

  6. I find inspiration from my IG account. I follow alot of runners and clean eating folks that inspire me to eat clean and run! We also help motivate each other, the support is so great!

    My get out the door snack is usually a water and coconut date rolls (just dates and coconut!) I pop a few in my mouth and they seem to hold me over pretty well!

  7. Healthy eating myth: That you can survive on 900 Calories a day! I was at my heaviest weight my senior of high school and thought that barely eating would help me lose weight. I didn’t see any progress, and I did a lot of snacking or binging at night. Fast forward 10 years, and I’m eating more food than ever, and am at my lightest weight in years.

    Mom’s best advice: If you don’t have anything nice to say, don’t say anything at all!

My mom’s favorite advice was to “leave things as you found them” – aka, clean up after yourself in a public restroom or in the office kitchen (you would be shocked to see how many people leave food in the microwave when it overflows or don’t bother to wipe up spilled coffee all over the counters!), pick up trash if you drop it, etc. I actually think this advices goes to a larger issue, which is not feeling entitled and realizing that no one owes you service.

  9. Every time I see you post about nutritional yeast I want to get some, but I always forget it…

    I also take collagen (for my knees). My doctor told me not to take this with, before or after coffee or alcohol, because our body can’t take advantage of it after acid foods or drinks. Not sure if it’s true, I just wanted to let you know.

  10. Love cinnamon. Probably my fave ingredient.
    Mom used to always tell us to get outside, go play or read a book. Might have been to get us out of the way, but it’s good advice.

  11. That tuna salad IS delicious! I tried it out yesterday 🙂

    Also, what’s your favourite kind of bread/toast? I’m always flip flopping between gluten-free varieties and regular whole wheat, and never know what brand to buy!

  12. That pasta looks amazing! Do you know if it has to be held in the freezer? I want to order from Amazon, but not sure I will have enough freezer space for six packs. Didn’t see anything about it online.
