I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Do you know the date you were supposed to be born? I didn’t until this afternoon, but I celebrated it with cake! :mrgreen:

According to my mom, my original due date was 31 years ago (July 5th), so it made perfect sense to celebrate my belated birthday today. Better late than never, right?! 😉

We tried to find a time to celebrate my birthday back in June, but our schedules just never seemed to matched up. (I hate how busy we all are nowadays.) This afternoon worked for everyone, so my mom, sister, grandmother, and aunt, Jane, came to my house for a birthday lunch. They also brought presents! :mrgreen:

My mom gave me some goodies from Trade Joe’s.

And my Grammie gave me a beautiful bowl that perfectly matches our living room. I love it!

For lunch, my aunt Jane made chicken salad with diced celery, scallions, and dried cranberries. I loved the addition of dried cranberries. So good!

I had my chicken salad on a piece of toasted gluten-free bread. I also enjoyed a glass of lemonade.

When it comes to my family, there’s never a shortage of desserts, so we had a couple of options to enjoy after lunch: S’mores on a Stick.

I’m feeling a lot better so I ate a small piece with extra frosting, which I nabbed from my sister, who didn’t want it. (I have no idea what’s wrong with her.)

Apparently, I didn’t push myself hard enough at yesterday’s 10K because I had tons of energy to burn this afternoon. After I said goodbye to my family, I hit the gym with Mal and ran four miles (35:10) on the treadmill.


I only planned to run two or three miles, but I was having a lot of fun, so I just kept running. I love that when it happens!


At home, I showered up and threw together a quick dinner of leftover chicken salad and a tomato salad that I made with olive oil, balsamic vinegar, sea salt, and pepper. Delish!

For dessert, I ate three (ok, four) S’mores on a Stick because I am obsessed with them. Dear God, they are amazing.

I’ve been ”˜playing’ a lot lately, so I’m spending the night working. Lots to do!

    Just writing to say thank you for your review on The Colonnade Hotel. My 14 year old son, husband and I stayed for the holiday weekend. We enjoyed Brasserie Jo for breakfast and had an amazing dinner there, too. The roof top pool was so refreshing and very cool according to our son, who enjoyed having lunch and hanging out. We also enjoyed dinner at Sonsie… great for people watching and the pizza was delicious. The Boston Pops and fireworks were fantastic and we also saw West Side Story. Your review was spot on.   2. Yay for birthday celebrations! In my culture it’s bad luck to celebrate early…so you’re golden! 🙂 hehe I love late celebrations because it’s kind of like an extended celebration. Extra happy birthday’s never hurt anyone!

  3. Oh that bowl looks beautifull! The first thing I thought when I saw it was: You should get like a small floating flower in there, like a lily! But I’m not sure how big the bowl is… it looks big! Def. a great addition to a house!

    My grandmother told my mom that I would be born 9 months and one week from conception. And sure enough! Out I came right in the middle of the afternoon.

  5. Yay birthday! Happy belated, and wow, those smores on a stick look downright sinful (in the good way!) I am a frosting fiend too! My hubs isn’t as sugar crazed as I am, so I know I have a lifetime of extra iced scoops:) Glad it was a wonderful day, and its so good to see you smilin again!

  6. So glad you were able to enjoy your belated birthday celebration! I was born 5/14, but was due at towards the beginning of April! (not sure the exact date) I was nearly 11 pounds, over 22 inches long and they had to break my collarbone to get me out (early 80’s). I’m sure now, I would have been a c-section, or at least my mom would have been induced earlier!

  7. I love this idea! Happy belated day on which you were supposed to be born! I have to say, that Trader Joe’s brownie mix your mom got you is like CRACK… if you’re a fan of that, you should try out Trader Joe’s chocolate cake mix. Holy bejeezleweezles- heaven in a cake… and I’m not even a chocolate fan!

  9. that’s interesting, i never thought of asking my mom my original due date. isn’t that crazy you were suppose to be a cancer instead of a gemini. I wonder how much truth there is to it and would you be a different person. In any case, happy belated birthday. 🙂 Sounds like such a great day with just the women of the family!
