Cupcake Heaven

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Good morning, bloggies!

I slept so late this morning! It was awesome and totally worth it. I feel so much better this morning. I almost feel like my normal self again. I just need to get rid of my stuffy nose!

Mal finished off the peanut butter the other day and almost threw out the jar. The horror! 😯 Luckily, I saved it in just the nick of time, and used it for OIAJ this morning.

I made blueberry oatmeal this morning.

In the mix:

  • 1/3 cup old-fashioned oats
  • 1/4 cup Galaxy Granola
  • 1/2 tbsp chia seeds
  • 1/2 cup frozen blueberries
  • 1 tbsp ground flaxseed meal

Mmmmm… peanut butter! 😀

I also had some iced coffee with hazelnut milk with breakfast.

So, even though I was feeling under the weather yesterday, I wasn’t too sick to bake cupcakes! 😉 I’m not going to lie, eating homemade carrot cake cupcakes for lunch definitely made me feel better! I was in cupcake heaven!

My cupcake baking extravaganza was part of a fun promotion with OpenSky. I have lots of adorable cupcake-related products in my shop, so I thought it would be cool to create a special cupcake aisle.

My cupcake aisle has 5 great items all handpicked by me, including cupcake plates, cupcake stands, cupcake wrappers, and a cupcake kit. Plus, 1 bundled item that includes a set of 4 cupcake plates + 1 color cupcake stand. All of the products are so adorable! I’m sort of obsessed with the dessert plates. 😉

So, here’s the deal:

  • If you purchase any of the individual items from my cupcake aisle, you get 10% off, PLUS an exclusive carrot cake cupcake recipe that I created the other day. Just use the coupon code ‘CUPCAKEAISLE’ at checkout.
  • If you purchase the bundle of items (cupcake plates + stand), you get 30% off (only $39.90 vs normally $58), PLUS you get my exclusive cupcake recipe. (You don’t need a coupon code for this deal.)

My cupcake aisle is only open for 1 week with these deals, so act fast. But, I’ll be adding more great cupcake-inspired products to the aisle in the future. Happy shopping!

P.S. These cupcake goodies make wonderful gifts, especially for bridal and baby showers. They come in really cute packaging!

Question of the Day

If you could only eat one dessert for the rest of your life, what would it be?

  1. I’m a cookie fan – through and through.

Love the look of those cupcakes – and those plates are so cute! I think my husband would kill me if I bought any more plates or bowls!

  2. 12 cups of frozen blueberries in your oats? ~ wow! just kidding, i know that was meant to say 1/2 cup right? 😉 if i had to pick one food to eat forever, it would have to be something sweet, say, cupcakes?

  3. Oh I don’t think I can pick one! I guess it would have to be something chocolate – maybe chocolate chip cookies.
Just wanted to let me know you’ve turned me on to Teddie PB – really tasty and not too expensive.

  4. Hi Tina! The cupcakes look delicious 🙂 I’ve been reading your blog for about a year now (and even made it through all your archives!) and I just wanted to let you know how much I love it. Though I check out other blogs occasionally, yours is the only one I read daily, in large part because you always take the time to make your entries detailed, witty, and optimistic. Since I’m in college (I go to Duke) I don’t usually have a kitchen to work with, but when I’m home your recipes provide great inspiration for cooking.
Thanks for being an amazing 5 minute daily break! -Liz

  5. So funny – I have those plates with different graphics! They have the same shape and wording, but the cupcake graphics are slightly different. A friend bought them for me probably 5 years ago.

Peppermint patties! I love brownies and chocolate chip cookies the most, but almost never eat them because it’d get outta control 😉

  6. That is so tough because I’m such a fan of cupcakes and brownies. I think I would pick cupcakes though because you could make all different flavors and never get tired of them! 🙂
I love the cute sweet plates!

  7. Hi Tina! Glad you’re feeling better. I just want to say that I LOVE your blog. It has totally inspired me to create a blog of my own attempts at a healthy lifestyle. Regarding the desert question – definitely would have to be chocolate chip cheesecake!

  8. I noticed your blueberry oatmeal was purple, that is my FAVORITE part about making oatmeal w/ blueberries 🙂 (it’s the little things)

one dessert for the rest of my life? ICE CREAM. hands.down.period.the.end.

  9. I can’t IMAGINE only having one dessert for the rest of my life (oh, the horror!), but if I HAD to choose, it’d be chocolate. Straight up, plain old 70% dark chocolate. YUM!

  10. Hi there, I’m alexa!! I’ve been reading your blog for a longgg longgg time now! I’m a sophomore at the college of charleston and I’m so interested in trying that Teddie pb! I went to their website to see where to buy it and unfortunately i may be out of luck! Do you know if their is an online distributor!! Thanks tina!! love your blog ( i just wrote pug) so much and look up to you so much!

thank you!! glad your feeling better!

  11. Beautiful cupcakes. Your dinning table looks like a high end cupcake shop in those photos! I would eat ice cream for the rest of my life. It is one of the little things I look forward to at the end of my day.

  12. So glad you’re feeling better! And can I also say how much it awrms my heart that you baked cupcakes from scratch? I’ve never understood why, in America, people rely on premixes so much, when baking from scratch is so easy!

  13. Just one? Hmm….probably funfetti cake with funfetti frosting and vanilla bean ice cream. I miss childhood birthday parties!

  14. White Chocolate Macadamia Nut Cookies! My fiance is deployed to Afghanistan and they are both of our favorite! They are the only sweet thing he will eat.

  15. On the assumption that plain dark chocolate doesn’t count as “dessert” but as “essential part of daily diet”, then I would say gluten-free black bottom cupcakes. YUM.

Btw, in regards to the question above about why you’re eating cupcakes etc, are you trying to lose weight? Because honestly you look tiny to me.

  16. Just catching up on a whole week of posts and sorry to see you have not been well. The correct quote is “feed a cold and you will starve a fever” so best to crank up the fluids and just eat soups, fruit etc when you have a cold.
Favourite dessert is White chock chip, Macadamia and Rasberry Muffins….amazing combo !
