I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

I started my morning with OOIAJ made with old-fashioned oats, Mad Hectic oatmeal, dried cranberries, walnuts, chia seeds, and vanilla soy milk.


I also drank some birthday cake iced coffee with soy milk and a splash of carmel syrup (no HFCS). So delish!

Cranberry-Walnut Lentil Bars

I slacked on blogging last night, but I did do some baking! This baking experiment includes red lentils, apricot preserves, peanut butter, walnuts, and dried cranberries. Why not, right? 😉



  • 1 cup cooked red lentils
  • 3/4 cup brown sugar, packed
  • 1/4 cup whole wheat flour
  • 1/4 cup apricot preserves
  • 1/4 cup peanut butter
  • 1 tsp baking powder
  • 1/2 cup walnuts
  • 1/2 cup dried cranberries


  1. Preheat oven to 350*F.
  2. Combine all ingredients in a food processor.
  3. Coat 8X8 baking pan in non-stick cooking spray.
  4. Spread batter in pan evenly.
  5. Bake for 18-20 minutes until cooked through.
  6. Allow to cool before cutting.
  7. Eat and enjoy!


These bars turned out quite well– they sort of remind me of blondies, but with a tangy fruit flavor from the apricot preserves and dried cranberries. The red lentils add a chewy, moist texture. I’d definitely make them again.

  1. I am headed to South Carolina for business tomorrow. Hope I can find some time to get my run’s in. Maybe at the hotel, early. Although, I do get to spend the weekend in Charleston.

  2. Yay…New York! Oh goodness…you have a crazy week ahead! I am hoping to get a job soon! I am really working my magic! Today I am taking the kids to the water park! Starting our week off with a bang! Good luck this week! Have a safe trip!

  3. i love that you go on these impromptu new york trips…what a cool luxury! i’ve never been and the flights are not super cheap from colorado (OR texas!) i love the baby pictures…just think about how beautiful your babies will be one day 🙂

  4. there are some pretty cool buses from Boston to New York–my kids want to take the double decker Bolt Bus (riding high of course!)—even Greyhound has wifi these days.

    I’m excited for this week! It’s my first week (of 2) off from training for any races since last October! Looking forward to some much needed R&R.

  7. Oh Tina, you seriously have the best life ever!! I just have a regular old work week in store but I’m super excited for the upcomming weekend because my parents are flying in for a visit on their way back from England! Love having them in town :).

    My week is pretty busy as well. Today is just work but look at the rest of the week.
    Tuesday – Work – 5 mile training walk for The 3 day
    Wednesday – Work – cross training – Barn (Anthony’s riding lesson)
    Thrusday – Work – 6 mile training walk – kids last day of school – farmer’s market
    Friday – Work – cross training
    Satruday – 3 day Expo, 10 mile training walk, and a wedding

  9. Love the pictures!! You look a lot like your mom in that picture! Which is funny isn’t it? When I look back at my newborn pics and see my mom… I look almost exactly like her!

    I turned 30 this year, too… seems surreal!

  10. I would give my left hand to be able to go to New York on a whim. Gosh-darn 30 hour flight away!

    But thank you for that recipe! I’m moving out this weekend and looking for simple and delicious recipes using budget ingredients and peanut butter. Yes, the peanut butter is a requisite 🙂

    Can’t WAIT for the coming week. Sounds so exciting!

  11. I’m off to a crazy start as well! We moved a week ago, and then I graduated from business school yesterday, and Thursday is our 4th wedding anniversary… I’m still living in a crazy unpacked house and my sister is visitng…EEK

  12. Those pictures are super cute, Tina! Thanks for sharing!! This week is pretty low key for me. The usual workout/work schedule stays the same but I do have some fun things planned. Bachelorette tonight, Book club meeting/CELTICS game #6 tuesday, girls night on Wed, and birthday celebrations on Friday! Love it when there are fun things planned in the middle of the week. It definitely makes it more bearable!
