Crazy Salad Maker

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Besides cake and pizza, salads are a food that never seem to bore me. Every salad is a little different, the ingredient options are endless, and, of course, they’re a great way to pack veggies into my diet.

In the mix:

  • Romaine
  • Grape tomatoes
  • Pickles
  • Sun-dried tomatoes
  • Onions
  • Ranch-flavored almond slices
  • Ground turkey
  • Balsamic vinegar

Great salad!

Dessert was fun tonight! 😀 I had some sliced strawberries with raisins, butter toffee glazed almond slices, and a dollop of coconut butter on top. Sweet and satisfying yet nutritious!

Before dinner, I snacked on a few dried apricots.

Sorry that I don’t have a lot to say tonight. My mind is totally pre-occupied (i.e. Blog Summit and house hunting)!

Enjoy the evening, blog friends! I’m off to bed early tonight. It was tough sleeping with that stupid Holter monitor. So glad that it’s gone! (If you’re curious, I might hear some results by the end of the week.)

Night, guys!

  1. i agree about salads. there are so many things you can mix into them! i LOVE grape tomatoes and sun dried tomatoes. your dessert looks yummy too. fresh, sweet, juicy strawberries are always delicious.

  2. I agree…. salads are so yumo! I make breakfast salad sometimes. If you add fruit (especially berries) it makes it more “breakfasty!”

  3. yummm i had a great salad tonight too – mexican style with black beans, peppers, onions, etc! i love how a dinner salad always leaves more room for dessert 🙂

  4. Hi Tina, i was wondering if you could help me solve this? why is it that my stomach bloats considerably after an hour’s swim? would you have any clue to that? just thought you might, it’s ok if you don’t thanks.

  5. Hi Tina!
I just wanted to tell you that I love your blog and seeing your eats! Mhmm that dessert looks phenom! Ps. I’m a new blogger so check out my blog when you get a chance!
    Have a great day!

  6. Goodluck house hunting! I know how time consuming that can be!!!

I bought my ‘first’ dried apricots last week, and they are VERY light in colour (light orange I guess)…why are yours darker? Are there different kinds? Sorry I’m an apricot newbie! haha

  7. where do you get all these great flavored almond slices? Could you please tell me the brand. Good luck w/house hunting I signed a contract in May but w/all the country’s forclosures/housing problems our settlement date isn’t until July. Argggggggggg
