Hello!
Here’s another crazy-easy and tasty recipe that we’ve made non-stop lately. It only requires three ingredients–ย ok, technically, four because you doย notย want to miss out on the guacamole– and comes together in no time at all. (You can also make this meal ahead of time and just reheat it, which is what we do for a super fastย weeknight dinner.)
This recipeย combines one of my newest obsessions, Trader Joe’s jarred Cowboy Caviar, with ground beef, cauliflower rice (also, obsessed), and a big ol’ scoop of guacamole, which, in my opinion totally MAKES the meal. I hope you guys enjoy this recipe as much as we do!

Makes 4 Servings
Ingredients

- 1 pound ground beef
- 1 jar (13 ounces) Trader Joe’s Cowboy Caviar
- 16 ounces riced cauliflower
- guacamole (optional, but highly recommended)
Instructions
- Cook ground beef in a pan on the stove top;ย break up meat as it cooks. When almost fully browned, add Cowboy Caviar to the pan. Heat forย a fewย minutes.
- Remove Cowboy Caviar meat mixture from stove and transfer it to a separate bowl/plastic storage container. Use the same pan and leftover fat from ground beef to cook cauliflower rice until translucent and lightly browned, but not mushy.
- When cauliflower rice is finished cooking, serve with Cowboy Caviar + ground beef and a scoop of guacamole.

There is nothing better than a meal that comes together in a flash with minimal ingredients. I love how you use Trader Joe’s gems to make this dish. The perfect on the go meal!
Yum! This sounds so good! I’m not a beef eater but I’m sure I could do this with turkey or ground chicken. I love how Murphy’s creeping up on the food here!

Oh Man, this is my favorite. I use Turkey instead of beef and my own veggies and sauce but I need to get some Cowboy Caviar. That makes it So Easy!
So funny – I literally made the same thing for dinner last night! I add onions to the cauliflower rice along with a bit of chicken broth (because sometimes cauliflower rice is a bit bland for me) – but your simple recipe is legit! LOVE Cowboy Caviar (ps, it’s good on fish tacos, too – try it!)

Looks delicious. Quick question. Did you use the frozen or refrigerator riced cauliflower? I have found in some recipes using frozen v.s fridge has made a difference. I’m thinking this one does not matter but wanted to check…Can’t wait to try it out.

Just went to trader joe’s, thought about this post, and picked up ground beef and the cowboy caviar! So excited because I haven’t really been inspired to cook lately–thanks! ๐ I’ve found that cauliflower rice doesn’t quite sit right with me ( boo ๐ ) so this will go on a quinoa/spinach bowl instead!
