Lovely and wonderful Becca of Bites of the Day hooked me up with a couple of bottles of Country Bob’s All Purpose Sauce. I’m not a big meat-eater, but I thought a little red meat in my life might do me some good, so I used a meatloaf recipe from the Country Bob’s website for tonight’s dinner: Country Bob’s Meatloaf.

Country Bob’s Meatloaf

Ingredients:

1 1/2 lbs lean hamburger
1/4 cup chopped onions
12 crushed saltine crackers (I used 20 Kashi TLC crackers)
2 eggs, beaten
1 Tbsp Country Bob’s Seasoning Salt (I used Montreal Steak Seasoning) 
1/4 tsp pepper
3/4 cup Country Bob’s All Purpose Sauce 
1/4 cup milk
1/2 cup flour

Directions: Mix all ingredients together, place in baking dish, shape in loaf, pour a little more Country Bob’s All Purpose Sauce on top and bake at 350 degrees for one hour. (I topped the meatloaf with a thin layer of breadcrumbs.) 

The meatloaf came out pretty good– it tasted delicious, but it was ugg-ly! I kept checking the meatloaf by poking it with a fork (and then a knife) to see if it was finished cooking. It was a mess by the time it was done!

So, when I mixed up all of the ingredients, the meat seemed too mushy to become a loaf. I followed the directions for the most part (minus the saltines and seasoning salt, but all of the major ingredients), so I put the gushy meatloaf in the oven and hoped for the best! The directions said to cook the meatloaf for 1 hour, but it took 90 minutes for mine to finish cooking! However, now that I look at the recipe, I see that the online version calls for 1/2 cup flour, but that ingredient was missing from the printed recipe that I received with my Country Bob’s All Purpose Sauce. I think the flour would have made all the difference in this recipe! Oh well, I guess the final product was worth the wait!
