Cookie Friday Chocolate Chip Cookies

So, you’ve probably seen these cookies on CNC all week long. I’ve actually made two batches now, and they have been appropriately devoured in less than 72 hours.

As you can tell, I really love these cookies. The whole wheat flour makes them thick and hearty, and the sugar, butterscotch extract, and chocolate chips give them the perfect amount of sweetness. Of course, they taste delicious, but the best part is they’re sort of healthy for you. Ok, no cookie is truly healthy, and if it was, you wouldn’t want to eat it! I mean, broccoli cookies? Um, no thanks.

I figured Cookie Friday was the perfect time to share this recipe, so here it is! Enjoy!

  • 1 cup whole wheat flour
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1 tsp butterscotch (or vanilla) extract
  • 1 tsp baking powder
  • 2 tbsp canola oil
  • 1/3 cup liquid egg whites
  • 1/2 cup chocolate chips


  • Preheat oven to 350*F.
  • Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  • Use a tablespoon to portion cookies and roll batter into a ball before placing it on a greased baking sheet, approximately 1-2 inches apart.
  • Bake cookies for 10-12 minutes.
  • Remove cookies from baking sheet and allow to cool on wire rack.
  • Eat and enjoy!

Makes approximately 18 cookies

  3. These look so good, and look so easy to make! Can I use 1/3 cup regular egg whites instead of liguid egg whites? How many do you think I need?

I made Banana Blondies today, I think you would love them 🙂 I reduced the butter amount, but still used real butter, I mean you can’t make blondies without butter.     sometimes readers tell me that they have no guilt making my recipes b/c lots of them are raw or vegan…but they forget that the pound of nuts and ridic amt of cocoa powder and agave may not be the ‘healthiest’ thing out there 🙂

    This recipe looks easy too! Are they chewy? I love the chewy, melty ones…I had no idea you could get Butterscotch Extract. I’m loving Maple Extract right now.
