Coconut Almond Butter Smoothie (aka “The Best Smoothie Ever Made”)

Remember “The Extra Mile” smoothie from Kure that I raved about the other day? Well, I (appropriately) re-named it “The Best Smoothie Ever Made” and successfully recreated it at home. Yay!

The original list of ingredients included coconut meat, but I didn’t have any on hand, and I actually wasn’t sure how it would work””bust open a coconut and shave some off? I dunno, but it sounded like a lot of work, so I swapped the coconut meat (and coconut water) for coconut cream, which worked really well. It made the smoothie incredibly creamy and added a ton of wonderful coconut flavor to it. Mmm, coconut”¦

Ingredients:

  • 1/2 cup coconut cream
  • 4 tbsp almond butter
  • 2 cups torn kale
  • 3/4 cup Silk coconut milk
  • 1 tbsp honey
  • 5 ice cubes

Directions: Combine ingredients in a blend until smooth.

Makes 1 serving

As you can see this isn’t a low-calorie smoothie, but, instead, it’s more of a meal in smoothie form. With protein, healthy fats, and nutritious leafy greens, it’s the perfect breakfast, lunch, or dinner, especially when it’s too hot to cook. I hope you guys love this smoothie as much as I do!

  1. Oh my gosh, the comments on this post were the best part! The smoothie looks absolutely delicious. You are in no way responsible for what other people consume and I think people questioning your ingredients are fantastic. People need to pay attention to what is right for them, not you or me or Susie Q over there. So the judgement side of comments was unnecessary. I personally have a incredibly low LDL, so I need saturated fat to help my liver produce a bit more of the “bad” cholesterol. And a 700 calorie smoothie is right up my alley. 🙂 But that’s just ME. Happy 4th!! LOVE your blog 🙂

    Congratulations again on being an Aunty. I am an aunty to 8 and LOVE it. My top tip just be the fun one and they will aways come to you. Bribing with chocolate helps too!!
    I love smoothies but as i am trying to lose weight find they are often high in cals for me. If i have them i have it for breakfast but tend to be hungry after a short time.

    That smoothie looks delicious! As far as all the calorie/fat concerns–I think the diet/lifestyle you choose is fantastic! You obviously make many great choices that work well for you. Reading your blog and seeing all the wonderful progress you’ve made at Crossfit and how healthy you look is evidence of this. I think so many people try so hard to skimp on fat and calories while eating “fake” nonfat, low calorie, etc. foods and believe this is not healthy in the least bit…and I am in school to be a Registered Dietitian! I Crossfit, too, so love that you include so much about it! Cheers!

  5. I always have smothies for breakfast, my recently discovered allergy to eggs combined with lack of time in the mornings makes them the perfect and healthy breakfast 🙂

  7. Yum! I am getting some dental surgery done in a few weeks and will have to spend at least 3-4 days drinking smoothies as meals. I am adding this to my “Must Make” list! 🙂
