I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Happy National Carrot Cake Day!! Sounds like my type of day, right? Well, it is a very special day.


Today is also the three-year blog birthday of Carrots ”˜N’ Cake!!!


Funny coincidence, huh?

Carrots ”˜N’ Cake has come a long way in three years. If you’ve been following along for awhile now, you know it’s been quite a journey!

It’s crazy to think that doing what I love is now my job. It’s even crazier to think how many times I almost quit my dream job. Working full-time, freelancing for Health, writing a book, and blogging was so overwhelming at times, I almost decided to throw in the towel with CNC. But, thanks to many, many, many heart-to-heart talks with my husband, I stuck it out. It was worth all of the hard work, stress, and tears.

Carrots ‘N’ Cake is the most rewarding project of my life, and if it wasn’t for my readers, it wouldn’t be alive and well today, so THANK YOU, readers! Thank you for reading everyday and supporting this blog. Each of your comments, emails, and conversations motivate me to continue blogging and better myself each and every day. Here’s to another year!


This morning’s breakfast was a mix oatmeal mix of oats, butternut squash, soy milk, chia seeds, cinnamon, nutmeg, ground ginger, peanut butter, and granola. I felt like a mad scientist adding all of these ingredients to my pot!

    I’m fortunate enough to be doing my dream job – I’m a social worker assisting TANF recipients and refugees (from places like Liberia, Iraq, Afghanistan, and the Congo) with job readiness. It’s awesome.

  4. Ok for one – that carrot cake at the top looks seriously amazinggg – my parents had carrot cake for their wedding and I def. want to follow suit 🙂

    And two, I am not kidding that oatmeal looks SO SO SO good – I am going to make it tomorrow night! YUM

  5. happy third year! I just started following you but i’m slowly getting caught up on all your posts. My dream job would be teaching english lit at a highschool and eventually that’s what i’ll do!

  6. Oh my dream job is definately something where I help others. So the track I’m on to be coaching girls on the run and coaching the half and full marathon distances at our local fleet feet is a start. I would like to blend that with a degree in dietetics for athletes. Food has never been a big deal to me, i’m hardly ever hungry, but fueling properly for running has brought a passion to the surface I didn’t know I had before.

  8. Congrats on your three year blog anniversary, Tina! I’m not a frequent commenter, but I’ve been reading for over a year and you continue to inspire me daily! My dream job is to expand my gluten free & vegan bakery. I took a break to be a momma to my 9 month old, but am ready to get back at it!!!

    I’m not sure what my dream job is. I suppose if I had to pick, I’d love to be a doula, specifically working with postpartum mothers & newborns.
