Chocolate Sunflower Butter Cookies

I blame Theodora for my recent obsession:

She should have never told me about sunflower butter! Actually, I’m glad she did. It’s awesome, especially in cookies.

Makes approximately 18 cookies

Ingredients:

  • 1 cup whole wheat flour
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1/2 cup sunflower butter
  • 1/2 tsp baking powder
  • 4 tbsp butter, softened
  • 1 tbsp cocoa powder
  • 1 egg
  • 1 tsp vanilla
  • Pinch of salt

Directions:

  • Preheat oven to 350*F.
  • Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  • Roll dough into 1” balls and place on a greased baking sheet, approximately 1-2 inches apart.
  • Bake cookies for approximately 15 minutes.
  • Remove cookies from baking sheet and allow to cool on wire rack.
  • Eat and enjoy!

  1. Although I am actually NOT a fan of sunflower seeds or sunflower butter, my boyfriend has a nut allergy and he would fall in love with me all over again if I made them for him. So I just whipped up a batch and they’re in the oven now! Thanks!!

  2. I’m obsessed with sunflower seed butter too! I haven’t tried baking with it yet though. I actually really like using it in savory dishes, like stir fry sauce. I bet it’s awesome in cookies too though – I’ll have to try them!

  4. I have been obsessed with sunflower seed butter for weeks! In fact, I haven’t bought peanut butter in forever, because I can’t stop my hand from reaching for the SB!

  5. Sunflower butter has been calling my name every time I go to Trader Joe’s! I’m pretty sure I need to make these cookies and pick up a jar or two next time I’m shopping 🙂 I bet they’d be awesome for Easter too!

  6. Mmm, these look delicious! I’ve never tried sunflower butter- I’ve just recently been introduced to almond butter. But these cookies make me want to go out and buy some right now 😉

  10. I just tried sunflower butter and there began an instant love affair! I’m using it to make cookies with a cream cheese frosting and trying them out in the real women of philadelphia contest. I hope paula and the judges have a sweet tooth!
