Hello and happy Friday!

So, every once in awhile, I kind of miss writing my day-in-the-life posts. Ok, honestly, I don’t miss documenting everything I eat, but I miss blogging about everyday happenings. I just enjoy sharing these details, and I like having a personal online journal, so I can go back and reminisce every once in awhile. Blogging helps me remember all of the good times in my life””even the small, insignificant things”” and, hopefully, you guys enjoy reading about them!

So true, right? And, with that said, here’s a little glimpse into yesterday!

Breakfast

I started my morning bright and early with a glass of Everyday Green Juice. I actually fell out of the habit of making juice every morning, but I’m back on board again. I missed it!

To eat, I enjoyed a pumpkin raisin muffin, which I made with garbanzo bean flour and almond meal. They’re also egg-free. I’ll share the recipe on CNC soon. Keep an eye out for it!

Workout

After breakfast, I headed to CrossFit for a workout. It was a partner WOD, so I teamed up with Kerrie once again. I am starting to like her better than Mal as a partner! Haha!

Row 500 meters
2 Rounds of Cindy (5 pull-ups, 10 Push-ups, 15 Squats)

Kerrie and I split up all of the exercises equally and finished 4 rounds (+ a little rowing) in 15 minutes.

Before I left CrossFit, I grabbed a special gift that my friend Jess left for me: Trader Joe’s Cold Brew! She was at TJ’s the other day and picked me up a bottle so I could try it. Jess is the best! What a fun surprise!

On my drive home from CrossFit, I swung by the hardware store to pick up a plunger. Our shower suddenly decided to back up… like totally out of the blue. It wasn’t even draining slowly and then all of a sudden, it’s clogged. Ugh. Sadly, my efforts with the plunger didn’t improve anything. Whomp whomp.

When Mal got home, he messed around with the pipes””snaking them and all that jazz””but he didn’t have any luck. He eventually found the clog, but when he remove the piece of piping where it was, the pipe basically crumbled in his hand. It was just old and rotted, so it wasn’t allowing anything to pass through it. Long story short, a friend of ours hooked us up with a plumber who came to our house bright and early this morning and fixed the problem. Thank goodness! Living without a shower (and toilet!) is not fun!

Lunch

For lunch, I reheated a bunch of leftovers and covered them in buffalo sauce.

After the Twitter chat, Murphy and I got ready to make some visits at the senior home.

When I take the pug for visits, I don’t like to carry my purse or anything else in my hands because I often pick him up so people can better pet him. I recently started putting my car key in Murphy’s therapy dog vest for safekeeping. For some reason, when I put it in there, it always makes me smile””like we’re both working together to make people happy. Murphy is so good at his job. He continuously impresses me with his behavior every time we visit.

Dinner

After visiting, I did some blogging (I have two fun giveaways for you guys next week!) and then made dinner, which was delicious. This recipe is definitely a keeper! Total comfort food dish.

Cheesy Sweet Potato & Chickpea Salad

Ingredients:

  • 3 cups roasted sweet potatoes, cut into 1-inch chunks
  • 1 cup chickpeas
  • 1/2 cup peas (I used frozen)
  • 3 wedges of Light White Cheddar from The Laughing Cow (although any flavor would work)
  • 2 tbsp grated Parmesan
  • 1/4 tsp garlic powder
  • salt and pepper

Directions:

  1. Combine all ingredients in a large bowl and mix well. Make sure the sweet potatoes and peas are warm, so they help melt the cheese. (The sweet potatoes might break apart a little as you stir, but don’t worry about it. The mushy-ness makes the dish even better in my opinion!)
  2. Serve immediately.
