Holy crap, this is a delicious recipe. Shaved Brussels sprouts and cheese? Two of my favorite foods baked together in one dish? Heaven. It’s also the simplest recipe ever. Please make it!
Ingredients:
- 10 ounces shaved Brussels sprouts
- 2 leeks (or half a small onion), sliced
- 1 tbsp olive oil
- 1 tsp minced garlic
- 3/4 cup shredded Gruyere cheese
- 1/2 cup shredded cheddar cheese
- 1 tbsp butter
- 1 cup milk
- 1 tsp Dijon mustard
- Salt and pepper to taste
- Breadcrumbs
Directions:
Sautee Brussels sprouts and leeks with garlic and olive oil until bright green, but not soggy. Transfer to a large bowl.
In a separate pot, combine Gruyere, cheddar, milk, butter, mustard, salt, and pepper. Cook on medium heat and stir until cheese is completely melted.
Then, pour cheese sauce onto Brussels sprouts + leeks and mix well. Pour cheesy Brussels sprouts + leeks into a small baking pan. Top with breadcrumbs.
Bake on 400 degrees F for 20 minutes until top starts to lightly brown. Allow to cool for 5 minutes before serving.

Oh goodness, this looks awesome! I just saw the shaved sprouts at TJ’s yesterday but passed because I still have a large bag of whole ones to consume. I hate shaving my own so I’m definitely appreciative of the pre-shredded ones that are out now.

I bought shaved Brussels sprouts from Trader Joe’s. I guess you could throw them in a food processor?
@Tina: I shred mine in the food processor and let me warn you – it may smell like someone just mowed the lawn! Haha, I try not to inhale it because its pretty bad! My favorite way to cook the sprouts is with bacon & balsamic, the flavors are so good together!
@Trace: it’s not as quick, but you can slice them thin with a knife too and it does the same thing!
Yum! – as I dig in to some roasted Brussels š You should try mixing in some ground up pecans to the breadcrumbs, makes it even more delicious!
Anything that lets me dump cheese on vegetables is good with me! š

Just the other day, my dad made me a pizza with those Trader Joe’s brussel sprouts. They were sauteed and then put on a pizza with toasted hazelnuts, fontina cheese and a Chardonnay butter base. DELICIOUS!

We made this last night to accompany our Salmon with Coconut/mango/pineapple tequilla Sauce. Delish! I kinda took liberty with it and improvised with the cheese, I also hate wasting so I threw in what we had! I used chedder and pepper-jack and a wedge of Laughing cow cheese. It was amazing! My girls (7 and 5) loved it too. It sort of tastes like Mac N Cheese without the Mac!

Oh, and I meant to add that I “shaved” my own brussel sprouts in the food processor and they came out great. I used the slicing blade rather than the grating one. Perfect!
I just tried this recipe yesterday, and I absolutely loved it! I could not find the shaved Brussel Sprouts at TJ’s so I just shopped up some Brusell Sprouts and it came out just fine. I Brought some for my lunch today…and can’t wait to enjoy it again.
