Ok, so this recipe has been on serious REPEAT in our house lately. Holy yum! Introducing: Carrot Chicken Ramen Noodles! Yep, that’s right. This recipe is a healthy twist on traditional packaged Ramen noodles that we all know and love. I don’t know about you, but the chicken flavor was, for sure, a childhood favorite. But, of course, this recipe is a much healthier version and made with carrot noodles and much less scary seasoning ingredients.


And, bonus, this recipe is super EASY to make. It only requires two main ingredients (carrot noodles and chicken breast) + a homemade seasoning. It couldn’t be more simple to make and, my goodness, it’s delicious! Be sure to add it to your must-make recipe list! 🙂



  • 12 ounces carrot noodles (I used a package of frozen carrot spirals from Trader Joe’s)
  • 4 ounces cooked chicken breast (I used leftover crockpot shredded chicken)
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 3 heaping teaspoons of Better Than Bouillon (or 3 chicken bouillon cubes, crushed into powder)
  • 1/2 teaspoon salt

Directions: Cook carrot noodles as directed. Once finished cooking, add seasoning and chicken. Combine well. Serve!

  1. How is this ramen in any way? Ramen is noodles served in a meat or fish-based broth… This is just some random flavors on fake noodles.

    1. @Brie: She said it was like the Ramen noodles she ate as a kid…like the ten cent packaged stuff that everyone lived on in college…….I don’t think she meant Ramen that you’d get at an authentic Japanese restaurant.

  2. This is almost too easy (in a good way). I get in the habit of wanting to make complicated meals all the time, but it’s much better for my schedule and my wallet to just make a huge batch of something like this!

  3. yum! I loved the chicken ramen when I was younger as well! I don’t have a trader joes’ near me, but I do have a spiralizer. If I was going to make the noodles myself, what would the cooking instructions be?


  4. I swear I’ve seen so many interesting and unique recipes on this site that it’s crazy! I would have never thought of replacing Ramen noodles with carrots. Who would have ever thought? I bet it’s pretty tasty though. The carrots probably add a slight sweetness to the dish that would otherwise be full of salt. I’m loving the unique recipes you share here. Keep them coming!

  5. Better than Bullion contains Yeast Extract which is a slightly less potent form of MSG. It is a neurotoxin.

    I disagree that it is “much less scary” than traditional ramen. For me, it triggers a migraine and I go temporarily blind.

  6. These carrot noodles from TJ’s are a staple in my meals lately. Have you used them in a baked pasta dish? Holy cow. Try it. I made a veg-friendly version with carrot noodles, homemade pasta sauce, fresh basil, meat-less meatballs, & almond cheese and topped it with nutritional yeast and wow. Totally DELICIOUS, and I didn’t even miss real pasta.
