Holy goodness, where did today go!?! I can’t believe how quickly it flew by! (If you’re wondering, I actually do say weird things like “holy goodness” in real life. I’m like an 80-year-old grandma. It’s cool.)
Breakfast
I’m really loving my two-ingredient pancake, but, yesterday, it didn’t hold me over until lunchtime like it usually does, so I added an extra egg and some shredded coconut to the mix this morning for some added protein and fat. I also drank a glass of iced decaf vanilla chai with almond milk. Iced tea is definitely NOT iced coffee, but it’s starting to grow on me.
In the mix:
- 2 eggs
- 1 banana, mashed
- 1/4 cup shredded coconut
Directions: Same method as my two-ingredient pancake.
I topped my pancake with almond butter and shredded coconut. Delish! And it held off my hunger for quite a long time. Success!
Lunch
When lunch time rolled around, I wasn’t sure what I was in the mood to eat, so I added a bunch of different foods to a “tasting plate” of sorts. It included:
A turkey burger.
An artichoke heart, sautéed spinach and zucchini.
And “Ants on a Log.”
All together”¦ awesome meal!
After lunch, I headed out to run some errands and get my car inspected since my sticker expires at the end of the month. I gave my keys to the inspection guy and then found a magazine to read in the waiting room. I assumed everything would go smoothly, and I’d be out of there in no time, but, unfortunately”¦
”¦ my car failed its inspection! GAH!!
Remember when my “check engine light” kept coming on? Well, I got that issue fixed (an oxygen sensor needed to be replaced plus some other stuff to get the exhaust system working properly), but now the Y-Pipe is leaking and needs to be replaced. The mechanic actually warned me back in June that the Y-Pipe might be an issue down the road, and, well, now it is. Ugh, car repairs are never fun and this one is going to cost me a fortune. I don’t really have any other options if I want to drive my car, so the mechanic is ordering the new part, so he can fix it later in the week.
I thought the ”˜R’ inspection sticker stood for “restricted,” but Mal thinks it stands for “reject,” which seems more appropriate for me my car.
When I was leaving the mechanic, I found it sort of amusing that they gave me a brochure to help me deal with my failed inspection, like I was going through a really difficult in my life. Ha!
