Hooray! It’s finally starting to feel like summer is on the way! It’s about time since we had such a longgggg, cold winter, and I am desperately in need of sunshine! 🙂
Last weekend, I was having major flashbacks to Mal and my amazing WODs and Paleo Retreat that we took a few years ago. We have SUCH great memories from that trip! After sweating it out most of the day, we spent a good amount of time at the beautiful Bar Esquina restaurant at our resort. It had such delicious food and the best specialty cocktails – and I fell in love with the Cabo Caliente!Â
I originally planned to recreate this refreshing cocktail from memory, but I lucked out by finding the actual recipe on their website. Mal and I might not be able to zip back to Cabo anytime soon, but we can certainly enjoy a Cabo Caliente in the backyard!
I love to add my own twist to things, so I kept the original ingredients, but added a little splash of my favorite Spindirft cucumber sparkling water. It’s such a light and delicious mix of cucumber with a kick of heat from a slice of fresh jalapeno. I’m already calling the Cabo Caliente the “drink of the summer!”
Cabo Caliente Recipe
- 1 oz fresh squeezed lemon
- 1.5 slices cucumber
- Cilantro
- 1 oz agave
- 1 slice jalapeño
- 2 oz tequila
- Splash of cucumber Spindrift Sparkling Water
- Muddle lemon, cucumber and cilantro.
- Add in remaining ingredients.
- Stir and enjoy!
