We were all out of leftovers from Friendsgiving and we had a busy few days ahead of us, so it definitely made dinnertime easier for us, especially since I hadn’t gone grocery shopping yet. This week’s menu was definitely a good one! First up was Spiced Pork, Squash & White Bean Soup with Lacinato Kale & Sage-Walnut Pesto. I know, right? It was easily my favorite meal of the week and tasted awesome as leftovers!
In honor of Thanksgiving, Blue Apron created an inspired dish with butternut squash, sage, and walnuts. To thicken the soup and give it some serious staying power, they added ground pork and cannellini beans. The end results was a satisfying soup with rich flavor and texture. I also loved that this recipe was a one-pan meal, which made cooking it especially quick and easy!
Up next was Cavatappi Mac & Cheese with Purple Top Turnip & Kale, which was a wonderfully comforting dish with an extra punch of veggies.
Mal isn’t a fan of turnip, so I nixed it from the dish. (I ended up roasting it with some fresh rosemary from Blue Apron and then adding it to a rice bowl for lunch.) The savory flavors of cheddar, Parmesan, and rich bÃ©chamel sauce in this mac & cheese were incredible! Even Mr. Picker Eater himself liked this dish! His response: “Mmm… cesssssss!” (<— How Quinn says “cheese.”)
And, finally, we enjoyed Roasted Cornish Game Hen with Rosemary Baguette Stuffing. The stuffing was made by toasting a fresh baguette in the oven and then mixing it with carrots, celery, onion, garlic, and a demi-glace. It was awesome.
