Birthday Celebration at Kimball Farm

Mastermind Weekend 1/16

Hey there!

I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.

An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

My wonderful and amazing sister turned 33 years old young today! (I still think it’s sort of crazy that we both have kids now! Haha!)

Q and I drove out to Kimball Farm to celebrate with her along with my mom, grandmother, and aunt.

Q was all smiles today, especially when he saw Grammie!

Lunch for me was a pulled pork sandwich with French fries and, oh my goodness, it was delicious! I practically licked my plate clean. Does anyone have an easy, no-fail pulled pork recipe that they want to share with me? My crockpot is just dying to make it!

After lunch, we sang “Happy Birthday” to my sister and enjoyed a pumpkin-cream cheese roll”¦ with seasonal Oreos””my my mom tried to fancy it up! Haha!

Happy birthday, sister!

Hanging out with my family was such a nice way to spend the afternoon! Side note: Baby sweatpants are the cutest thing ever! I actually bought Q a few more pairs just the other day because I think they’re so darn adorable. And they’ve got to be comfy, right??

Questions of the Day

Have an awesome pulled pork recipe to share?

Has anyone tried the candy corn M&Ms yet? My mom mentioned them to me today and now I am curious!

  1. My favorite easy pulled pork is— put a pork tenderloin in the crock pot with 1 beer (anything that you like). Cook on high for 1 hour, then low for 6-7?. Drain all the liquid out, shred the pork with 2 forks and add BBQ sauce (my favorite is Sweet Baby Rays) and keep on low for an additional hour. Done! Serve on top of rolls, sweet potatoes, spaghetti squash, etc!

  2. Love your blog Tina. I’m so impressed and proud that you’re so determined to be a great mom and maintain your athleticism! I have twins that just turned 2 as well as an active 5 year old, just feeling back in the swing of things. Anyway, I cannot say enough about this pulled pork recipe from Sandra Lee. The marinade it cooks in has a great amount of sweet & salty but it’s adaptable to whatever you might want to do with it afterwards (tacos/salad/sammies). I have made it no less than 10 times and every time people rave about it! Super simple, but my one tip is to buy a good marmalade and nothing with HFCS…

  3. I love Kimballs! I grew up in Westford and it’s one of my favorite places in the world. I am going on Sunday! Have to get in a few more ice cream trips before the season is over. What a fun place to celebrate a birthday!!

  4. Julie from has a great pulled pork recipe that we use. Ingredients: 1 pork shoulder & 1 can of low sodium beef broth.
Directions: Put both in a crock pot and on low for 6-8 hours.
So easy and so delicious!! It is extremely moist and pulls apart without effort!

  5. The candy corn M&Ms are SO weird. They’re white chocolate and just mega sweet. I recommend the pumpkin spice M&Ms, as well as the gingerbread and peppermint ones during the Christmas season. 🙂 Also, pumpkin spice Oreos exist. Where can I find these?!
