After being out of the office for 3 days, I had lots to do at NuVal today! I felt like a crazed woman trying to get everything done, so when I got home, I did some baking to help relax myself. There’s just something about baking that seems to ease my mind. It’s like a mental escape for me.
There’s hardly any food in my kitchen, but there was a single sweet potato! So, I whipped up a batch of Sweet Potato Oatmeal Raisin Cookies.
I enjoyed my cookies with a mug of Sugar Cookie Sleigh Ride Tea. It was the perfect snack for a stressful day!
Lunch
I ate lunch at my desk this afternoon. I had the other half of my veggie burrito from Salsa’s. I didn’t even bother to heat it up; I just ate it cold.
I also snacked on a couple of peanut putter-filled pretzels from Trade Joe’s. Basically, once you start with these babies, you can’t stop. If you’ve tried them, you know what I am talking about!

It is so funny you posted about these pretzels today. I happened to eat about a half a bag of them about an hour ago. Like, literally a half a bag. I just couldn’t stop. Back on track tomorrow, but I won’t be buying them again. They are crack.

I’m with pretty much every commenter here too – baking is the ultimate in relaxation (unless it goes wrong…) – I LOVE it so much! There’s something so satisfying about starting with a load of random ingredients and ending up with something fabulous š
Have good afternoon!
The PB filled pretzels are to die for! I just checked out your cookie recipe… looks simple and tasty.
Those pretzels are DANGEROUS. I alwyas have to try my hardest NOT to buy them b/c I’ll polish off several hundred calories worth just on the walk home!!!
Quick question, I have noticed that you are able to come up with recipes for baked goods. How do you figure up your measurements for the ingredients?
Thanks!
I’ve never tried TJ’s pb pretzels before, but I have a bag just waiting to be opened. Now I’m half scared to open it!!!! š
@Carrie: I just wing it!

Hey Tina,
Long time reader (you were one of my first!), first time commenter and NEWBIE blogger, like infantile, started yesterday! Anyway, just wanted to say you definitely inspired me to finally start my own blog after wanting to for so long. I’m from Boston, so especially partial to your blog, and I’m incorporating that into my blog! Anyway, just wanted to hi & thanks for being quite the inspiration!
Adorable placemat!

I just read your article on eating more when alone. You took the words right out of my mouth. I have a HUGE sweet tooth and I can not stop at one when I’m alone! I feel your pain:))
I can’t buy those pretzels because I eat the whole bag. So addictive.
These cookies sound delicious – I am definately going to try soon. I too love to bake and am always modifying and looking for healthier recipes :). Thanks!
Those pretzels are the BEST! So much so that it’s one of those foods I rarely let myself buy, because the whole bag will be gone in a day :p
