I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

After being out of the office for 3 days, I had lots to do at NuVal today! I felt like a crazed woman trying to get everything done, so when I got home, I did some baking to help relax myself. There’s just something about baking that seems to ease my mind. It’s like a mental escape for me.

There’s hardly any food in my kitchen, but there was a single sweet potato! So, I whipped up a batch of Sweet Potato Oatmeal Raisin Cookies.


I enjoyed my cookies with a mug of Sugar Cookie Sleigh Ride Tea. It was the perfect snack for a stressful day!



I ate lunch at my desk this afternoon. I had the other half of my veggie burrito from Salsa’s. I didn’t even bother to heat it up; I just ate it cold.


I also snacked on a couple of peanut putter-filled pretzels from Trade Joe’s. Basically, once you start with these babies, you can’t stop. If you’ve tried them, you know what I am talking about!

  1. Peanut Butter filled pretzels…in your words, “HOLY YUM!!” My fiance’s dad introduced me to them and I can’t even look at them when they’re around or I’ll eat the whole container!

  2. I love those peanut butter pretzels!! I just finished the bag off today for a snack, there was only a couple left but man they are good. I eat so much peanut butter though sometimes (2 a day) that buying this just means MORE peanut butter, which I love but too much can be bad!
