Yummy breakfast this morning!
Doesn’t this piece of Baked Banana Oatmeal look delicious?!
Baked Banana Oatmeal
Makes 2 servings
Ingredients
- 1 cup old-fashioned oats
- 2 tbsp brown sugar
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp chia seeds (optional)
- 1/2 cup chopped walnuts
- 1 cup almond milk
- 1 tsp vanilla extract
- 1 banana
Directions
- Preheat oven to 350*F.
- Combine all ingredients (except for the banana) in a mixing bowl.
- Coat a loaf pan with non-stick cooking spray
- Pour oatmeal batter into pan and spread evenly with a spatula.
- Slice banana and place on top of oatmeal batter.
- Bake for 30 minutes or until top is lightly browned.
- Allow to cool before cutting.
Eating Baked Banana Oatmeal for breakfast this morning was such a treat– it was hearty, sweet, and comforting. And, the recipe was so easy to make. I could probably even make it during the work week, if I prepared the ingredients the night before. I’d just have to pop the mixture into the oven the next morning. I’ll have to keep this idea in mind! 😉
I also enjoyed a glass of iced coffee with breakfast.
I’ve already made some serious progress on my To Do list for today. Hopefully, I can keep up the momentum!

This was awesome! Great for college students, because we just have to mix and pop it in the oven. I changed it up by turning it savoury: used water instead of milk, omitted the sugar and spices and added shredded cheese and green onions instead.
This looks so good! I’ve been making a similar version of this lately in the microwave. Oats, banana, a little protein power, and then, the key, is to add an egg. It makes it really bake in to a bar, not just weird oatmeal!
I loved this recipe so much I had to make it again for a simple, easy breakfast! Thank you so much for such a great twist on oatmeal!

Mdae this for breakfast today! YUM! I made it much less pretty and sort of mushed it all today. Pretty food usually doesnt taste as good anyway 🙂
Looks delish! If I were to eat only half of this (one serving) could I freeze the other half and reheat it another day? 🙂
This recipe looks excellent, will probably try to lighten up on the sugar some, but I can’t wait to try. I’m not sure about putting cheese and green onions in this like Vi, but will come up with a solution!
I made these in a muffin pan, it was nice twist on this great recipe!
