Hi, friends! I hope you are having a nice Saturday! Here are some highlights from our morning, including a ridiculously delicious recipe for Bacon-Wrapped Sweet Potatoes that you NEED to try ASAP!
Our day started like usual: Up and at ’em before the sun, followed by breakfast, CrossFit, and Coffee Shack for iced coffee and donuts. I love our family “gym days” so much. I truly look forward to them all week. Remember when I talked about The Perfect Day Formula? Well, this type of morning would definitely be part of it.
And, pretty exciting for me, I got a PR during the workout: 100 unbroken Double Unders! I’ve done 90-something at least a couple of times, but never 100. (I stopped right at 100 because I was so relieved I made it, but now I wish I kept going!)
Back at home, we helped Quinn select some “baby toys” to donate. I wasn’t sure how giving away his toys would go, but he was awesome about it. After our neighbors “who are getting older” gave him a bunch of cool toys, it made sense to him! 🙂
When lunchtime rolled around, Quinn opted for a nap over food, which makes me wonder if he’s my kid, but, hey, at least he’ll be hungry when he wakes up, right?
You guys might have seen these babies on CNC Instagram Stories, so, as promised, here’s how to make one of my new favorite snacks/side dishes/appetizers: Bacon-Wrapped Sweet Potatoes. They couldn’t be easier to make and, my gosh, they are delicious! ENJOY!
Bacon-Wrapped Sweet Potatoes
Ingredients:
- 1-2 medium/large sweet potato, cut into wedges
- 1 pound of sliced bacon
Directions: Preheat oven to 375 degrees F. Wrap one slice of bacon around each sweet potato wedge and place on a baking sheet with silicone mat (or tin foil). If you have extra sweet potato wedges, place them in between wrapped pieces to cook and absorb extra bacon fat as they cook. 🙂 Bake for 35-40 minutes until bacon is fully cooked and sweet potatoes are soft. Allow to cool slightly before serving. Serve with BBQ sauce, blue cheese dressing, or other favorite dipping sauce.
