What I Ate in a Day – Holiday Edition

I’ve partnered with Enlightened to bring you this blog post and share how incredible their ice cream tastes. Seriously, I am so impressed. If you like Halo Top, Enlightened will knock your socks off. The texture and mix-ins are a zillion times better! Read on to see how it fits into my day, macro-wise, and why it’s truly THE BEST “healthy” ice cream on the market. 

We’re all up and at ’em well before 6:00 AM. A rule in our house: No television before 6:00 AM, so when I come downstairs, I see Mal and Quinn sitting in the kitchen. Mal is eating breakfast and Quinn is playing with toys. Our kitchen counter is an absolute disaster, but, hey, real life, so I snap a photo of the whole scene. We went to Edaville the night before and didn’t get home until kind of late, so our stuff pretty much exploded everywhere. Rise ‘n shine!

Murphy, of course, followed me downstairs. It was breakfast time after all!

After I feed Murphy, I pour myself an iced coffee and add some protein powder and almond milk eggnog to it. Delicious! I’ll be drinking this combo until Christmas for sure!

As I’m taking my first sips of coffee, I remember that it’s the first day of 24 Days of Togetherness, so I ask Quinn to pick an activity for the day. He picks: “Get a Christmas Tree and decorate it,” and we are all super excited. We talked about getting our Christmas tree in the next week or so, so things worked out perfectly!

After that, I get myself ready for the day and then take Murphy for a walk. Shortly after that, Mal leaves for school. We say goodbye and then I get Quinn ready for school. I drop Quinn off and then drive home. (This timeframe is kind of a whirlwind, so I forget to snap photos.)

Back at home, I make myself a rice cake with peanut butter mixed with collagen (for extra protein) and cinnamon. The peanut butter jar is just about empty, so I give it to Murphy. He’s one lucky pug.

I take my rice cake and immediately head upstairs to my office to get to work. I work at my stand-up desk for a few hours and then break for a quick lunch. On the menu: Carrot spirals mixed with ground chicken, peas, and pesto. Mmm! Easy, delicious, and nutritious! 🙂

After lunch, I hop in the car and drive to the Capital One Cafe to meet my new video/digital marketing team. I know, right?! Who am I? Ha! Well, I’m stubborn control freak, who finally admitted that she needs help with CNC because she can’t do it alone while simultaneously running Designed to Fit Nutrition and Nutrition House Software. Anyway, we spend about an hour brainstorming ideas and content for the New Year, and I can’t wait to share a new (and improved!) side of CNC with you guys!

After our meeting, I stayed at the cafe and worked a little while longer. Eventually, I headed home and heated up a quick snack to keep me satisfied until dinner: Roasted butternut squash with peanut butter and cinnamon.

As I’m eating my snack, Mal pulls into the driveway. We have an appointment to check out some options for new kitchen counters and we’re running late, so we hop in the car.

We check out a bunch of options and mostly narrow-down our choices. It’s a big decision, so we decide to “sleep on it.” What do you guys think?

After that, we drive to Quinn’s school, pick him up, and immediately head to Weymouth (near where we used to live) to pick out our Christmas tree.

We picked out a beauty of a tree (not too short like last year) and then headed home. We are all starving, so I put on a pot of high-protein pasta and dinner is done before we know it. In the mix: pasta, steamed broccoli, butter, and grated Parmesan.

After dinner, we start to decorate the Christmas tree, but, unfortunately, 2 out of 3 sets of lights are totally dead. Wahhhh. What a buzzkill. We decide to hold off on decorating until the next night, so we have time to buy some new lights. But the night isn’t a total letdown because it ended with birthday cake-flavored Enlightened “The Good-For-You” Ice Cream. Ooooh, yes. And, guys, this stuff is no joke. I’m so impressed with the taste, flavor, ingredients, and macro-nutrients. It’s an all-around winner in my book! The birthday cake tastes JUST like ice cream cake – pretty much exactly like it! OMGGGGG, it’s so good!

More about Enlightened… It’s ice cream that makes you feel as good as it tastes. (Probably TMI, but Halo Top often destroys my stomach if I eat too much, but I haven’t had any issues with Enlightened.) Enlightened is loaded with protein and fiber, but low in calories, sugar, and fat, and it comes it some incredible flavors, including caramel oatmeal crunch, chocolate chip cookie dough, chocolate peanut butter, cold brew coffee, red velvet, sea salt caramel, and more! Sounds pretty amazing, right? Well, IT IS and you need to try it. So, where can you get some? Enlightened has a store locator on their website.   1. If you insist on using regular incandescent lights like I do, get the light keeper pro! It has helped me fix strands of lights, but sometimes the task it too difficult even with it so I just save some of the lightbulbs that are still good and chuck the strand.

  2. Fake ice cream makes me sad. I tried Halo Top (pistachio) and it was such a disappointment. I promised myself not to do that again. If I want ice cream, a scoop of the good stuff is how I roll. No more ersatz desserts.

  3. I think I like the top counter better. In the picture, it looks like it has a hint of beige/tan/brown, which will coordinate well with the cabinets. Even if it doesn’t have that shade in person, it will give more texture.

  4. I wouldn’t try either Halo top or Enlightened. I have IBS and sugar alcohols really mess my gut up even in small amounts. I like your togetherness tradition, it sounds like fun!

  5. Is the first countertop Fantasy Brown? It looks similar if it isn’t. I am doing a complete kitchen renovation came very close to choosing that countertop. Point is…I love your first countertop.

    I don’t like Halo Top. Enlighten is an improvement. I bought chocolate with brownie pieces. Pretty good. I will try some of the other flavors.

  6. I LOVE Halo Top. The oatmeal cookie and caramel macchiato are my favorite flavors. I’ve been wanting to try Enlightened for a while now, but it looks like most of the stores near me only have the rice krispie treats or chip products. Wah wah!

  7. I enjoy Enlightened Ice Cream too and the Caramel Oatmeal Crunch is my fave. BTW, l love the expression on your face in the snuggly photo with your Quinn. A mama’s love is so powerful and it’s obvious by your expression here. You’re a great mother, Tina, and you’re doing a fantastic job!

  8. I’ve tried Halo Top but I can’t justify buying it all the time – too expensive. I’ll have to try Enlightened!

  9. I enjoy Halo Top and now am super excited to try Enlightened! I saw it the other day and hesitated but I will get it on my next trip. Both brands are always on sale at our grocery store so that is a bonus. And even though people talk about eating a whole container I am always satisfied with a couple small scoops, maybe the protein in it??

    Love the second granite option.

  10. Both are beautiful, the top one looks very expensive and the flow of the marbling would make me happy to own it. But I know my husband would find it distracting, he prefers the very subtle look of the other one, he’s all about the clean and sleek look. And I know I would still love owning that countertop as well. I’d feel all modern and in style.
    I haven’t tried either ice cream. For the most part I don’t eat ice cream very often, but I’ll have to put this on my list of must try.

  11. I feel like I am the one person who does not like Halo Top. It’s such a sorry excuse for ice cream to me and something tells me the the sugar substitute it uses is no good. Ice cream just probably shouldnt be healthy. But I will have to check out Enlightenment and see if it’s any better/what the ingredients are like. Im always intrigued! I so want ice cream to be less guilt inducing!

  12. I need to hop aboard that protein pasta train. I’ve tried several flavors of Halo Top. I think my favorite might be the peanut butter chocolate, but it KILLS my stomach too. Then again, I just re-discovered my aversion to dairy after a Saturday night pizzeria fail, so there’s that. Real ice cream over “healthy” ice cream any day, but I DO want to try Enlightened! Are there frosting swirls?! That would be reason enough to purchase that flavor!

  13. I tried to give Enlightened a chance, but didn’t like it. The texture felt off to me — almost a little “slimy.” I also didn’t love the aftertaste. Guess everyone’s taste buds are different!

  14. I see these recipes looks very different and good.but i like the pasta in a dinner.so i recommend to taste these types of recipes. thanks for sharing some these types of useful recipes.

  15. We have the same counter tops in the top picture in our bathroom and love them! I wish I would have done them in the kitchen too instead of the dark counters my husband picked out.

  16. Cool idea to mix collagen into the PB! I’ve been mixing vanilla protein powder into mine, which is tasty, but I bet the collagen goes totally undetected. Maybe just makes the PB a bit thicker?
