Hi, guys!
After breakfast yesterday morning, I got my sweat on with this at-home chipper!
I forgot to time myself, but this workout took me awhile to finish (maybe 20 minutes?) and it left me a tired, sweaty mess. I took multiple breaks during it to catch my breath and let my muscles recover. This one is definitely a butt-kicker!
Lunch
After my at-home WOD, I showered up and then reheated some Loaded Baked Potato Chicken Salad from the previous night’s dinner. I thought Mal took all of the leftovers for his lunch today, so I was psyched to see a Tupperware container of it sitting in the fridge. Woohoo! Oh, it’s the little things in life…
Dinner
For dinner, I cooked up some Stuffed Sole Fillets from Omaha Steaks that my mom gave Mal and me for Christmas.
When she asked me what we wanted for Christmas this year, I jokingly said “food” because, well, food is awesome and we really didn’t need or want anything specific. Mal and I just aren’t “stuff” people. Sure, we’ll buy something if we need it, but we’re not a fan of accumulating things, which is another reason why we want to simplify our life in 2013. I thought my mom would get us gift card to Whole Foods or Trader Joe’s, but she bought us a variety pack of goodies (meats, fish, loaded baked potatoes) from Omaha Steaks. Cool! I’m excited to try them all!
Along with a Stuffed Sole Fillet, I had some brown rice and steamed green beans. Good dinner!
After dinner, I had a killer cookie craving, so I whipped up a batch of Peanut Butter Sugar Cookies, which I enjoyed while folding laundry and watching Stars in Danger: The High Dive, which I only watched because I wanted to have a good laugh about it, but then I ended up kind of getting into it. Diving is no joke, and it looked really hard. I know I couldn’t do those dives!
Peanut Butter Sugar Cookies
Ingredients:
- 1/2 cup smooth peanut butter
- 1/2 cup sugar
- 3 tbsp liquid egg whites
- 1 tsp vanilla extract
Directions:
- Preheat oven to 350 degrees F.
- Combine ingredients in a mixing bowl.
- Use a spoon to portion batter onto a prepared cookie sheet.
- Bake for 10-12 minutes.
- Remove from oven and serve warm.
Makes 9 cookies
