Remember my mom’s recipe for Apple Crisp? It’s seriously delicious and one of my favorite desserts ever, but, sadly, it’s not at all healthy. I mean, there’s a cup of sugar and a full stick of butter in it. So, when Mal suggested it for dessert last night, I happily made him a batch and made myself a lighter version, which turned out amazingly. It’s no mom’s Apple Crisp, but it’s pretty close!
Apple Crisp Light
Ingredients:
Filling:
- 3 medium apples, coarsely chopped
- 2 tbsp sugar
- 1 tsp cinnamon
Topping:
- 3/4 cup rolled oats
- 1 tbsp all-purpose flour
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 tbsp butter, softened
Directions:
- Preheat oven to 350*F.
- Combine filling ingredients in a large bowl; coat apples in cinnamon and sugar, and then transfer to a baking dish. (I used a 1-1/2-Quart Covered Round Dish.)
- In the same large bowl, combine all of the topping ingredients and mix well, and then pour on top of the apples in the baking dish and spread evenly.
- Bake for 40-45 minutes until apples are soft and topping is lightly browned.
- Allow to cool before serving and enjoy!

BLT’s were on the menu for last night’s dinner: 2 slices of bacon + 2 slices of tomato + lettuce + mayo on a toasted whole wheat Sandwich Thin.
Baconator. Because … she makes everything better?
(Yes, I got sucked in to The Bachelor again. I’m not proud, but I love those crazy chicks!)
On the side, I had some roasted Brussels sprouts.
And, of course, for dessert, I enjoyed some Apple Crisp Light. The topping, in particular, came out so wellāāhearty and sweet!

I remember watching the Bachelorette one season in college, and I swore I wouldn’t get addicted and then, inevitably, I did. š I haven’t watched it since, because I know I’d just get addicted all over again…haha. š

Ahh I love the Bachelor!! I TiVo’d it last night and watched part of it this morning while on the elliptical. I am already picking my favorites and do far I like the girl who received the first impression rose (can’t remember her name) and nicki, the dental hygienist. I have to say too I was a little confused by the “conflict” of the night and think maybe the producers kept those two around for a little drama? We shall see I guess!

I had roasted brussel sprouts the other day. They’re just so good – try adding pecans too them, it totally makes them.
Also, I was literally just having a conversation the other day about apple crisp. You don’t happen to know the difference between a crisp and a cobbler do you? I’m going to have to look it up…
I don’t! Good question! Maybe it has to do with the texture on top?
@Tina: It does. A cobbler has more of a crust/dough on top, while a crisp has more of a crumbly, crunchy topping.

I haven’t had Brussels sprouts since the day we went to The Smith! I LOVE them… should probably buy some and make them. Maybe cooking more veg should be my goal for 2012. As for trashy TV, nothing beats Excused!

I made a crisp like that for Christmas and it was light like yours, but I added fresh cranberries and it gave it a nice tart kick to it!
Last night after The Bachelor I also watched Celebrity Wife Swap, and I hate to admit it but sometimes I watch Keeping Up with the Kardashians. There’s absolutely no logical reason they deserve to be famous or kept up with, but hey gotta love drama! š

I’ve never watched the Bachelor, but I remember one year, the CW had a spin off show called “Farmer Wants a Wife” and it was the same concept but it was city girls trying to win the heart of a farm boy. It was basically the trashiest show ever but I was mega addicted!

My Dear and I were sucked into watching The Bachelor too- it’s so bad, it’s good haha! Some of the girls this season are def out there… We really liked the two nurses [one got a rose, one went home] and the girl who got the first impression rose seems pretty down to earth, although, I at first thought she was gonna be kinda pompous since she rode horses [very jugdemental, not proud of it but happy I was wrong]! And the model looks like she’s gonna be the center of trouble this season…

Oh yes, I’m definitely on The Bachelor bandwagon as well! Since I really loathe those shows like “Jerseylicious” and “Jersey Shore,” Bachelor is my guilty pleasure. I think the only two girls I really like are Kacie from TN and the girl that rode in on the horse and got the first impression rose. The rest just seem nuts!
That apple crisp sounds delicious, definitely a healthier version! It sounds quite similar to the one I make, if you add in dried cranberries with the apples, it makes it a little tart and even more delicious. Over vanilla bean ice cream, what a yummy (somewhat good-for-you) tret!
I got sucked into the Bachelor too. I feel like every season it gets a little more dramatic and crazier. I mean who knew there would be all the drama on the first night…and Jenna doesn’t make a very good name for bloggers!
