If you’re a long-time reader, you know just how much I love the flavor combination of chocolate + coconut + almond (i.e. No-Bake Almond Joy Cookies, Gluten-Free Almond Joy Cookies), so, obviously, it was just a matter of time before I created an Almond Joy Protein Ball recipe.
This one is especially awesome because it works with a variety of protein powder flavors– chocolate, vanilla, or coconut– and turns out well every time! Enjoy!
Ingredients:
- 4 Medjool dates (soak in water if they’re firm)
- 1 scoop (~ 20g) vanilla, chocolate, or coconut protein powder (all 3 flavors work – coconut is my fav!)
- 2 tbsp creamy almond butter
- 2 tbsp shredded coconut
- 2 tbsp chocolate chips
- 1 tbsp coconut oil, melted
Directions: Combine ingredients in a food processor until smooth. Roll batter into 8 balls and place on parchment paper. Refrigerate for at least an hour. Store balls in a plastic container with a lid in the fridge.
Makes 8 balls
