Introducing Almond Joy Chia Pudding! Oh, yes.

This recipe combines three of my favorite flavors””chocolate, coconut, and almond””into a cool, creamy, and satisfying dessert that is actually somewhat healthy for you, thanks to those little chia seed orbs, which are packed with omega-3’s, protein, and fiber.

This pudding has a wonderfully sweet and coconut-y flavor that reminds me of melted Almond Joy ice cream. Mmm! So. Good. I love, love, love this new recipe, and I know you will too!

Almond Joy Chia Pudding

Ingredients

  • 2 tbsp chia seeds
  • 3/4 cup almond milk
  • 1 tbsp creamy almond butter
  • 12 tbsp shredded coconut
  • 1 tbsp sliced almonds
  • 1 tbsp mini chocolate chips
  • 1 tsp maple syrup
  • 1/4 tsp coconut extract

Instructions

  1. In a small bowl or resealable container, mix together ingredients until smooth.
  2. Place bowl/container in the refrigerator overnight or for at least 3+ hours.
  3. Serve cold and enjoy thoroughly!

  2. Holy Yum! I add chia seeds to my overnight oats and love them! Any substitute ideas for the coconut extract? Maybe just add vanilla extract and then increase the coconut? I don’t have the extract but I want to make it right now! You’ve given this preggo a serious craving!

  5. My comment has nothing to do with the delicious pudding! lol. You always have the cutest headbands and I especially love the one in the picture above. Where do you get your sport and recreational headbands? With 3 boys in baseball in the hot humid weather here in south Louisiana I always have my hair up and I just thought a cute headband can change things up a little. Thanks Tina! I made this, following the recipe, except I substituted chocolate almond milk and a little greek vanilla yogurt for the plain almond milk, didn’t use the maple syrup since my coconut flakes have sugar on them, and because I didn’t have any coconut extract, I used my Barlean’s pina colada flavored fish oil swirl. It is heavenly! Thanks for posting this recipe! It is amazing how the chia seeds absorb the liquid, making it pudding-like.

  9. So, I’ve made this about five times since you posted this. It’s sooooo good. Of course I tweaked it a bit by using peanut butter instead of almond and vanilla extract (I didn’t have any coconut and when I tried almond extract the first time it was too much almond). I’ve had it for dessert, for breakfast … I just want it all the time now!
