Almond Energy Bars

Looking for a mid-morning or afternoon snack that is nutritious, satisfying, and tastes great? Well, look no further. This snack is for you!

Made with rolled oats, brown rice cereal, almond flour, sliced almonds, and dried cranberries, these Almond Energy Bars will fill you up and please your taste buds at the same time. Unlike packaged energy bars, these ones are made from wholesome ingredients (none of that hard-to-pronounce, artificial stuff) and aren’t loaded with a ton of sugar. Each and every bite is healthy and delicious!

Almond Energy Bars_

Serves 9

Ingredients

  • 1 cup brown rice cereal
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 2 eggs
  • 1/3 cup honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon (1/2 ounce) chia seeds
  • 1/2 cup sliced almonds
  • 1/2 cup dried cranberries
  • 2 teaspoons cinnamon
  • 1/4 teaspoon sea salt

Directions

Preheat oven to 325 degrees F.

Combine all ingredients in a large bowl and mix well.

Coat an 8” X 8” baking pan with non-stick cooking spray.

Pour batter in pan and spread evenly. Flatten and smooth top with a spatula.

Bake for 25 minutes.

Remove from oven and allow to cool before slicing and serving.

  1. Looks delicious! I didn’t think I was a huge cranberry fan until I’ve had them a few times recently in other bar recipes. I love the subtle sweetness they add without overpowering the other ingredients. Can’t wait to try these!

  2. Are these crunchy crunchy? I think my daughter would love them but she’s only 2 1/2 so anything super crunchy doesn’t go over too well. We have some dried cherries waiting at home that would be great in here.

  3. These look great. Question for you- how do you determine when to use Almond meal v Almond Flour for recipes?

  4. I love easy recipes like this because bars are the best snack during the day or before a workout and so easy to carry to work or in my gym bag. I’ve loved the other almond recipes so I’m excited to try this one!

  5. I love making homemade energy bars! They are a staple in my house and so easy to make! I love how it’s really easy to mix it up with the fillings too so that they are always different! I’ll have to try your version out, thanks!
