You guys know how much I love a good cookie, especially when it’s a mostly healthy cookie! These Almond Butter Collagen Cookies combine the best of both worlds when it comes to macronutrients and taste. Made with creamy almond butter (protein + fat), collagen (protein), ground flax (protein, carbs, fat), and brown sugar (carbs), they are a balanced mix of deliciousness. And, bonus, they’re super easy to make and free from gluten, dairy, and eggs, which means if you or your loved ones are sensitive to any of these ingredients, you can still enjoy them!
Almond Butter Collagen Cookies
- 1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
- 1/2 cup creamy almond butter (peanut butter works too!)
- 1/4 cup collagen (protein powder works too!)
- 1/4 cup brown sugar
- Preheat oven to 350 degrees F.

Combine ingredients for flax egg in a small bowl and set aside.

In a separate bowl, combine almond butter, collagen, and brown sugar.

Mix well and then stir in the flax egg until fully combined.

On a silicon mat (or parchment paper) on a baking sheet, use a spoon to portion batter into 9 disks.

Bake for 14-15 minutes.

Remove from oven and allow to cool before serving.
