This afternoon, Mal and I received the best anniversary card in the mail from my mom. It pretty much sums up our marriage! π
Inside, it says: “Making faces behind the back of whoever’s acting childish helps, too.”
Love it!
Mal and I are always acting childish and goofy together. I swear, we act like we’re 5-years-old most of the time! π But, hey, lots of laugher makes for a great marriage, right?
Lunch
I tried something new for lunch today: Buffalo Tofu. I could have sworn I saw a recipe on Mama Pea’s blog for it, but maybe it was on a someone else’s blog? I searched a few of the likely suspects (Healthy Tipping Point, Fitnessista, How Sweet It Is), but came up with nothing. In the end, I just winged-it and did my own thing.
I pressed my tofu overnight, sliced it into half-inch slabs, poured some buffalo sauce on it, and let it marinate in the fridge for 30 minutes before pan-frying the pieces in olive oil.Β It seemed to work pretty well! π (If anyone knows what recipe I am talking about, feel free to send it my way!)
I added the Buffalo Tofu to an arugula salad with carrots, tomatoes, celery, scallions, and crumbled Athenos feta.
For “dessert,” I enjoyed a very ripe peach. It was now or never with this baby! It was definitely on its last day. The skin was all wrinkly.
I’m heading to the gym next. My hip is pretty sore from yesterday, so I’m planning to keep my workout low-key with time on the elliptical and some serious stretching afterward.
P.S. I have a fun surprise coming this evening! I’m finally going to reveal what I was doing in New York City a few weeks ago!

My mom does the same thing with our cards–labels the boy my husband and the girl me. As if I needed help figuring that out! Ha ha.

yes definitely laughter is the key! Except when you start fighting over who’s funnier . . . it’s not much of a fight though, since I’m the hilarious one, hahahaha π

Australian unknowingness here – what is buffalo sauce?? The tofu looks darn tasty, but I have no idea how I could replicate it as I’ve never heard of that sauce before!
