This afternoon, Mal and I received the best anniversary card in the mail from my mom. It pretty much sums up our marriage! š
Inside, it says: “Making faces behind the back of whoever’s acting childish helps, too.”
Love it!
Mal and I are always acting childish and goofy together. I swear, we act like we’re 5-years-old most of the time! š But, hey, lots of laugher makes for a great marriage, right?
Lunch
I tried something new for lunch today: Buffalo Tofu. I could have sworn I saw a recipe on Mama Pea’s blog for it, but maybe it was on a someone else’s blog? I searched a few of the likely suspects (Healthy Tipping Point, Fitnessista, How Sweet It Is), but came up with nothing. In the end, I just winged-it and did my own thing.
I pressed my tofu overnight, sliced it into half-inch slabs, poured some buffalo sauce on it, and let it marinate in the fridge for 30 minutes before pan-frying the pieces in olive oil.Ā It seemed to work pretty well! š (If anyone knows what recipe I am talking about, feel free to send it my way!)
I added the Buffalo Tofu to an arugula salad with carrots, tomatoes, celery, scallions, and crumbled Athenos feta.
For “dessert,” I enjoyed a very ripe peach. It was now or never with this baby! It was definitely on its last day. The skin was all wrinkly.
I’m heading to the gym next. My hip is pretty sore from yesterday, so I’m planning to keep my workout low-key with time on the elliptical and some serious stretching afterward.
P.S. I have a fun surprise coming this evening! I’m finally going to reveal what I was doing in New York City a few weeks ago!

My husband and I are best friends first and foremost! You have to be able to make each other laugh or it just does not work. The romance part is just a bonus! The card is sweet! Enjoy your afternoon!

I love it and was actually thinking about making it tonight. It has been a while!

I also wanted to add that the problem with the white being at the top only happens in IE and not in firefox.
That’s cute that you and Mal can act silly with each other! I have a feeling that leads to a very happy marriage š
Your lunch looked delish. Tofu on salad is one of the best ideas EVER. It doesn’t matter how the tofu is prepared- always good.
Matt @ No Meat Athlete is the first blog that comes to mind!
Oooooh can’t wait to hear about NYC
Cute cute cute card!! š so very true.
You have been eating more tofu than usual lately…do you think you have to acquire a taste for it? I’ve only tried it once and did not like it.
Hi-
Did you know you can do a “food blog search”- when you cannot remember where you saw the recipe… it’s pretty handy..
happy anniversary
I immediately thought of this recipe when I read your post… only because I immediately went to try it after I saw it!

Wasn’t me! (I don’t really like buffalo sauce…gasp!) But my friend Susan made it, so maybe that’s what you were thinking of?

I agree that laughter is key in a marriage! And a DVR.
I did buffalo tofu wraps once, not sure if I actually typed out a recipe though? Makes me want to make them again!
BBQ tofu…yum! Sounds delish! And that card is too cute! š I think the best part about my marriage is how much we laugh! It is seriously the best medicine! š
That is the BEST card ever!!! Buffalo tofu looks super yum!
I hope your hip feels better soon! š
I act childish with my bf… it’s definitely a good way to laugh.
i freaking love that card!! adorable!! yall are so cute š hope your hip heals girl!
I’m sorry to hear your hip is now bugging you. After knee surgery a few years back and being able to run on it on and off since then I think I am pretty much just giving up on running much. the discomfort just isn’t worth it, even though I love to run. We can start a speedwalkers club š
@Cynthia (It All Changes): YES! It was your blog! š
Have a good time at the gym! I hope your hip gets to feeling better š
@Christie {Honoring Health}: YES! Love this recipe! š
That card is so cute! I always peruse the selection of daschund cards b/c I have one and the card industry loves them right now. But pug cards are really cute too! What kind of buffalo sauce did you use?
That is such a cute card! Excited to hear what the surprise is!!
Cute card š I cannot wait to find out about your NYC trip tomorrow!!
Love surprises! Looking forward to hearing your story:)
Buffalo Tofu….how genius is that!! Totally trying it tonight š I’m busting to read the lowdown on NYC!!
