I'm a 39 year-old wife and mom, residing on the South Shore of Massachusetts with my husband, Mal, our son, Quinn, and our adorable pug, Murphy.
Carrots 'N' Cake is where I share my love of food, staying fit, and living a healthy life. While I try to pack the most nutrients possible into each meal, I have a number of favorite foods that are not necessarily 'healthy,' but are still delicious and fun to eat (hello, cake). If eaten in moderation, I believe that the 'bad' foods can be part of a well-balanced diet and so Carrots 'N' Cake was born!
Back in 2008, I was recently engaged and wanted to 'shape up' for my wedding day, but I've never been a proponent of crash diets or unsustainable weight loss. I wanted a true lifestyle change, something I could continue long after the wedding was over. I had a binder (old school, I know) of recipes and workouts, but I needed a better way to keep myself organized.
I had started reading a couple of healthy living blogs and my interest was piqued, so I thought – what the heck, why not start one of my own? Plus, my then-fiancé Mal was totally absorbed in Fantasy Football (ha!), and I wanted to have my own hobby. So, on February 3rd, 2008, also National Carrot Cake Day (and quite the coincidence), Carrots 'N' Cake was born!
What initially began as a personal blog to hold myself accountable as my wedding day approached morphed into CNC at present— a go-to resource for all things healthy living, from my love of delicious food (and wine), to fun workouts, quick beauty and fashion tips, daily #momlife shenanigans, and the 'true life' of tackling a chronic illness (ulcerative colitis) head first.
After my son was born, I quickly realized that I didn't have the same amount of time (or energy!) to devote to my usual healthy habits. But I firmly believe that if there's a will, there's a way, and I've learned how to achieve a healthier lifestyle as a new mom. Often times, it involves quick workouts and easy nutritious meals, but we make it work. As for fitness, I'm an avid CrossFitter and runner – I love Orangetheory! I've completed 3 marathons and more than a dozen half marathons. I also take spinning, barre, and yoga classes, from time-to-time. I'm pretty much game for any fitness activity!
Nowadays, I enjoy sharing these simple yet effective and efficient workouts and recipes with my readers. I also work 1:1 with nutrition clients to help them find balance within their diets while achieving their body composition goals. I share all sorts of (random) updates from my life, so there's always something new on CNC. Be sure to check back frequently to see what's happening!

I completely agree with your philosophy. To be as healthy and fit as possible, but, still enjoy life is my motto! I’m quite a bit older then you. I work as an ER nurse and I plan on being healthy and fit for a very long time. Love your blog!
For me the challenge is setting the right push-yourself goal. One that is going to make you improve but not injure you. That’s the sweet spot I’m trying to find right now with my running. But I always try and remind myself that I can always pull back if I need to, so go hard 🙂

I have made this recipe many times, always in a double batch to allow for freezing of extras. I use oat flour instead of almond flour which allows for a denser muffin. I understand the idea is to have a Paleo muffin, but it is another option since walnuts are already in the muffin. I also add apples instead of raisins to cut back on the sugar and use Trader Joe’s unsweeted coconut for even less sugar. Try using a little less honey too. A great muffin that everyone loves!

My wife and I have been trying to change diet ever since we got our first kid. I am a runner but don’t always have time to run and when you add bad meals it becomes a concern. She already gained some weight after the second birth of our daughter and she wants to go back the way she way. I can see this is possible and will enjoy your ebook! Thank you
