I wasn’t planning to blog about breakfast this morning, but I just had to share this pancake recipe. It’s a really good one! :mrgreen:

A Really Good Pancake Recipe

Makes 8 pancakes

Ingredients:

  • 1.5 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1.5 cups vanilla soy milk
  • 3 oz low-fat Greek yogurt
  • 1 egg
  • 1 tsp canola oil

Directions:

  • Combine all ingredients in a large mixing bowl.
  • Heat pan (or griddle) over medium heat; coat with non-stick cooking spray.
  • Drop 1/4 cup cupfuls of batter onto the pan/griddle.
  • Cook each pancake for 2-3 minutes and then flip. Cook on the other side for about 1 minute.
  • Serve with your favorite toppings.

These pancakes turned out really well– thick, doughy, slightly sweet, and a little chewy. They’re especially amazing with a drizzle of maple syrup on top. I’m a big fan. It’s definitely my new go-to recipe for pancakes.

  1. I had pancakes for bfast too! yum! My parents always add yogurt to their pancakes too, I don’t because I don’t eat dairy but I’ve heard its a great addition. Have fun!

  2. Oh, yummy! I was wondering, if I only wanted to make a batch for myself (I usually use half a cup of mixed flour + oats, and half a cup of milk for my batter for myself) how would I substitute the egg? There aren’t any cartoned egg whites here in China, so… :S Thanks!

  4. Wow, that IS a good pancake recipe! For once I actually wanted to eat them with FEWER toppings to enjoy the flavor. MMMMM!!!

  5. Question – This recipe says “3 oz Greek Yogurt”…do you know how many tablespoons that is? Loving your recipes!

  7. I tried this recipe with one modification. I used Kefir instead of Greek yogurt (I don’t like yogurt). These pancakes were the BOMB! I will be making these again!
