I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Health-wise, today was a better day. I can’t say that I feel like my old self again, but instead of spending half of the day in the bathroom, I only spent about a third in it. It might not sound like much, but it’s progress!

I haven’t slept more than a couple of hours for the past several nights (I actually don’t think I’ve ever been so sleep deprived), but I finally slept for 5.5 hours straight from 4:00 – 9: 30 AM this morning. It was the most amazing sleep. You have no idea.

By the time I walked Murphy and went to the grocery store, it was almost lunch time, so my breakfast ended up being my lunch too. I had a banana, a Brown Sugar Cinnamon Pop-Tart (I had a serious craving for them), and a coffee latte Ensure drink. I’ve felt weak and woozy lately, so I bought a package of Ensure drinks to help fill in the nutritional gaps in my diet. I went with the coffee latte flavor since I’m starting to miss my daily iced coffee. The coffee latte flavor is really sweet, but drinkable.

I spent the next few hours on the couch, veggie out and watching TV. While sitting there, I repaired Murphy’s stuffed rabbit, who he destroyed last night. He pulled of both of its ears and then ate one. Mal had to reach down his throat to retrieve it.

Murphy has also eaten the nose off of “Rabbit” and ripped a hole in its back. Murphy really doesn’t take care of his toys.

Mid-afternoon, I started to get hungry, but not enough for a meal, so I snacked on a bag of PopChips and a glass of iced tea.

A little while later, Marie texted me to see if I wanted to hang out. I still don’t trust my intestines, so I suggested a barbeque at our place. Marie liked the idea and headed over with Bella and Grady. (Dave was golfing with Mal and his friend, Chris, so they came over once they finished.)

We planned to grill out, so I swept the porch, cleaned off the chairs, and washed the table. The 25 minutes that I spent cleaning the porch was easily the highlight of my day. I didn’t feel any cramping or urgency to run to the bathroom… at all. It was the first time in weeks that I felt like a healthy person again.

I definitely had a little moment sweeping the porch. Once I am better, I will never, ever take my health for granted again. This whole thing has really made me appreciate the little things. Running is truly a gift.

Before I knew it, Marie arrived with the dogs. A little while later, the guys showed up, sweaty and hungry, so we immediately started to cook dinner. I helped Marie make Twice Baked Potatoes and Mal fired-up the grill.

I helped myself to a small cheeseburger and two servings of potatoes with ketchup. ”˜Real’ food never tasted so good!

The guys picked up a chocolate cake while they were out on a beer run, so I just couldn’t turn down a piece for dessert.

I ended up eating a small slice. Mmm! (So far it hasn’t upset my stomach!)

After dinner, Mal put his tall friends to work!

Dave and Chris helped Mal cut back some huge, leafy branches that pretty much took over our backyard.

  1. So glad you’re feeling a little better, Tina! And hopefully you’ll feel even a little more better tomorrow. Hope you get some good rest!

  2. You should try blending the Ensure with ice. It makes it a little less sweet, more fun to eat (drink?) and adds extra hydration!

    1. @laura: I’ve never had Ensure, but I blended it with ice and banana for my grandfather last summer and he LOVED it – I bet some of the flavors would be really good with a frozen banana blended in!

  3. I hope you get your stomach problems sorted out soon! I swear, once you do, you’ll feel like a completely new person. I used up a lot of last year in pain and upset about my GI issues but now that they’ve been taken care of, I feel unstoppable!

  4. I’m super jealous of your outdoor space – that’s a major requirement for my boyfriend and I for our next place!

    Murphy’s toys look exactly like my sister’s dog’s – all the stuffing is always popping out of the side and their limbs and eyes are always missing. Haha.

    So glad today was a better day – and I totally support your Brown Sugar Poptart craving! Haha. I used to LIVE on those in college…I may have to go pick some up myself now…

  5. Glad you had a nice day! I know you said you were diagnosed with colitis – but did they check if you had c-diff (Clostridium difficile) ? My mother came down with this last year and was misdiagnosed since c diff is not common in young, healthy people. It is a imbalance in the bacteria of your intestines, basically the “bad” bacteria take over.

  6. I love hydrangeas — so cheery and they stay fresh in water for a couple of weeks. My mom cuts a few from her backyard so she can give me a bunch every time I see her. Reminds me to water them right… now! 🙂

    And I’m glad you decided to try the ensure to fill the ‘nutritional gaps’. Hopefully you won’t have to drink them for long! They aren’t the best thing in the world, but they do have their place!! Sometimes we mix them with ice cream/frozen yogurt for our patients to make them taste a little better…

  8. Glad to hear that you are feeling better. There is nothing worse than GI issues. The few years after college I really suffered from what sounds like similar issues. I found that going to full fat foods- cheese, yogurt, milk was helpful to me. Also Kombucha has been a life saver- delicious, bubbly, probiotics!

    Actually, I do. I have had food allergy related GI things that are very similar and yes, sleep is the first thing to go.

    Also when I had my daughter, I nursed her around the clock, as needed. And for the first 6-9 mos or so of her life, that meant every 4 hrs, no matter what. No.Matter.What. When she finally hit 1 year, I slept for 5 hours, all at once, in a row. The best sleep I had had in 1 year!!!

    And I am so happy to hear you’re feeling a bit better. Having a moment, not taking our health for granted, trust me, I completely understand this. Deeply. I have been there.

  11. Tina- I’m glad today was a better day. I have never struggled with the exact medical issue that you are experiencing, but I did spend about two years of my young adult life totally sidelined by a chronic illness. It’s amazing how much it makes you appreciate your health. It will get better. Hang in there!

  12. Sounds like a great dinner! Glad you’re feeling better. My girl Golden destroys all of her toys. Rips the stuffing out, the squeakers out (I wish they would make dog toys without squeakers!), and then destroys the ‘shell’. She also chews up balls, frisbees, everything. I feel so bad because they really can’t have many toys!!

  13. I’m glad you’re feeling a lil better. I completely agree with your comment that running is a gift! I have had this random back pain for months now and I’m unable to run and I’ve never missed something so much. Hopefully we’ll both be back out there soon:)

  14. It’s good to hear your feeling at least a bit better. I can’t really imagine how much it’s affecting your entire daily routine. It already seems like your taking positives out of this experience though, which is all you can try to do sometimes in rough situations.

  15. Yumm for that cake! I, too, have had a craving for poptarts lately. Cherry is my favorite flavor… they’re so under-appreciated.

  16. Does Murphy sense when you’re not feeling well? My beagle could always tell when I wasn’t feeling well and would snuggle with me until I recovered. Now with my beagle gone, when I feel sick I tell my boyfriend that I’d rather have my beagle with me than him.

  17. I nearly inhaled latte when you said that Mal had to extract part of the toy from inside Murphy – my daughter swears she’s had to reach into Alouysius’ stomach to retrieve things he’s not supposed to have. Another Pug thing, I guess.

    If regular Ensure is too sweet, try Ensure Light…much less sweet.

  18. I’m glad you are feeling better! I have colitis and totally get what you mean when you feel better and realize how much we take our health for granted sometimes. I hope things keep getting better for you, colitis sucks 🙂
