We’re back from our cruise (which was a-mazing) and normal blogging will resume tomorrow. I missed you guys!
I hope you all enjoyed the guest posts on CNC while I was away. I really tried to mix it up with a variety of topics and opinions to keep things interesting and entertaining. A big THANK YOU to all of the guest posters who contributed!
Since no week is complete without a meal plan, here’s what I have cooking for this one!
Here’s this week’s menu:
Sunday: Turkey sub from Subway
Monday: Tuna melts with carrots and hummus
Tuesday: Pasta with Kale & Walnut Pesto
Wednesday: Out to dinner with friends
Thursday: FrisĆĀ©e Salad with Poached Eggs & Bacon
Friday: Glazed Pork Kebabs
Saturday: BLTs with roasted Brussels sprouts and salad

*My shopping list doesn’t include all of the ingredients necessary to make the above meals. It’s just what we needed and includes items for other meals and snacks (not just dinners).

Welcome back. I hope you had the time of your life. How do you make your tuna melts? I’m always interested to hear how others make those classic recipes.
It depends on my mood, but either avocado + tuna with melted cheese or relish + tuna with melted cheese. I also sometimes add mustard, salsa, chopped raw veggies and/or truffle salt to the mix.

Yay for Vacation! I could really use one of those sometime soon. Anyway, as I have said before, your meal plan is one of my favorite posts of yours and I look forward to it each week. Noticed you are making BLTs this week–one of our favorites as well. If you want to kick it up a notch, make it a BLTA (A is for Avocado). Maybe it is because I am in California, but I put Avocado on everything and I have not found one thing that it doesn’t make better.
I’m a big fan of the A on BLTs too! š

All of those meals sound delicious, I’ll definitely have to try to re-create some! How do you go about planning such well balanced meals? I’m just starting to change my lifestyle to live healthier and would love some advice as to how you stay on track and motivate yourself, you are an inspiration!

I’m so impressed that you already have a meal plan all set up. It usually takes me a few days to get back into the groove after vacation. Looking forwrad to hearing about and seeing pictures of your trip! I took the same cruise 1 year ago this weekend and wish I was back there TODAY!
