This 5-Minute Microwavable Granola is incredible and, holy cow, SO EASY TO MAKE. Seriously, you just combine the ingredients in a microwave-safe dish with lid and then just pop it in the microwave for 5 minutes. Simple as that. Before you know it, you have a tasty and healthy granola to add to yogurt, oatmeal, smoothies, or eat alone with milk (my favorite way). I hope you love this recipe as much as we do!
Ingredients:
- 1 cup rolled (or quick) oats
- 1/2 cup sliced almonds
- 1/2 cup shredded coconut (unsweetened or sweetened)
- 1/4 cup honey (or agave)
- 1/4 cup melted coconut oil
- 1/2 tsp cinnamon
- 1/4 tsp sea salt
Directions: Combine ingredients in a microwave-safe dish. Microwave for 2:00, remove from dish from microwave and mix/toss granola really well (30-60 seconds). Return dish to microwave and cook for another 2:00 minutes. Remove from microwave, mix well, and allow to cool. Store in a container with lid.

Hi Tina, as a long time CNC reader I have to be honest I am losing interest in your blog. It seems week by week you become less of a day in the life style blog and sound more scripted and less personal. I miss the days of your daily recaps of what you ate, workouts, general happenings and family life. They flowed and felt genuine. Now the blog posts feel shorter and are just a recipe, a sample workout, or a sponsored post. I could be wrong but I feel like a lot of long time readers feel this way as well as I have noticed reduced traffic and posts from readers in the comment sections. I am thrilled for you, Keri and your business venture, but it would be nice to see CNC stay true to it’s roots in addition to you running a successful new business. Please consider returning to your roots. Take care.
This could be my downfall! I love granola and make it about once a month. 5 minutes is so much better than an hour!

Wondering how long this stays good for? Expecting a baby soon and would love to make a big batch to have on hand, but worried it only lasts about a week?
I’m not totally sure. We ate it all within a week, but the good thing is that it only takes 5 minutes to make!

Just made it as directed…cooked 2 min., stirred and cooked 2 more. It still looks really wet — will it crisp up as it cools?
Hmmm… it should be damp, but not wet. You used coconut oil that had been melted, right? Not the liquid stuff?
