Guys, I threw together this meal about 10 minutes and it turned out so well. Mal could not stop raving about it, and he told me that I needed to share it on CNC. It was THAT delicious.
My recipe for Sweet & Sour Meatballs is just four ingredients and you cook it in the microwave. It doesn’t get easier than that! And the Trader Joe fans will especially love this recipe because you can find all of the ingredients there.
Ingredients:
- 1/2 bag of Party Size Mini Meatballs (approximately 10 ounces/20 meatballs)
- 1 cup chopped pineapple (fresh or canned)
- 1/2 bottle of Trader Ming’s General Tsao Stir Fry Sauce (approximately 6-7 ounces)
- 1 package of Frozen Organic Brown Rice (10 ounces)
Directions:
Cook meatballs and rice in the microwave as directed. Cliff notes: Nuke meatballs for 4 minutes, rice for 3 minutes.
Meanwhile, chop pineapple (or just hang out, check Instagram or something, if you’re using canned).
When meatballs and rice are finished cooking, mix them together.
Then, add pineapple and General Tsao Stir Fry Sauce.
Mix it all together.
And EAT!!
This is seriously the easiest and tastiest meal ever. Make it. Trust me on this one!
Recipe makes 2-3 servings

Hi Tina: Looks yummy! Is your new house starting to feel like home yet?
It is!
Yum! I love that microwave brown rice… I use it for easy fried rice when I’m too tired to cook anything else, but this looks so simple I think I could manage it even after the longest of workdays. Thanks for sharing!
I love that Trader Joe’s brown rice. It makes dinner so easy.
We’ve been making sweet and sour sauce at home with brown sugar/pineapple/green peppers/onions since before I was born, and I bet this tastes really similar — the recipe reminds me of it, except we let the sauce simmer while we batter and fry the meat.
Simple recipes are the absolute best.
Tina. I seriously could kiss you right now. In a non weird way of course. I am a night gym person because it’s when I feel my strongest and I always struggle with quick dinners because I get home exhausted. The LAST thing I want to do is cook. Tonight I stopped by TJ’S on the way home and picked up the ingredients for this. It was every bit as awesome as you promised. I added some chopped scallion too and it was delish. Thanks to Mal too for making you share!
So glad you liked it!!
Oh my goodness, these look and sound amazing!
I love quick easy meals! I will definitely try this!
Thank you soooo much for posting this. Why, you ask? Because I opened my cabinets yesterday morning to see what I needed to get at the grocery store this week and found 3, yes 3! can’s of pineapple. I don’t even eat pineapple, but I am going to be making this recipe for sure next week 🙂
Haha! Nice! It’s a good one. I hope you love it! 🙂
Just made this for lunch it was delicious my son and his buddies in from work said that’s the best lunch in a long time!!!
So glad to hear that!!
This sounds super yummy and pretty easy! I can’t wait to try it out 🙂
Pinned this and cannot wait to try it! Easy, fast and yummy meals are a Mom’s dream! Did Quinn try it? Was thinking the meatballs and pineapple would be fun for my 9 month old to eat!
He ate the pineapple, but wasn’t interested in the meatballs. We call him our “little vegetarian” though. He’s not much of a meat eater.
My husband is going to love this! Thank you for posting!
See, and people always complain how eating healthy is expensive and cooking is time consuming. When it’s not, it’s really not.
But I am jealous that you have frozen rice in America. We don’t. Or did you just cook it before and froze it yourself? Oh, nevermind, found it!
This looks great! I’ve never thought to actually try their frozen rice. I’m definitely a fan of a dinner I can make quickly using the microwave at the end of a hectic day.
This looks really yummy, mouthwatering and yet very simple to do! will definitely try this! 🙂
