I have a potential new favorite recipe in your household: One-Pan Chicken Taco Skillet! It only calls for 5 ingredients (many of which you probably already have in your kitchen), and it’s guaranteed to be a crowd-pleaser!
This meal comes together in no time, thanks to a pound of quick-cooking ground chicken and some frozen veggies. (Ground turkey or lean ground beef would work too.) The addition of salsa and taco seasoning adds a ton of flavor without using one of everything from your spice rack. I don’t know about you, but it kind of annoys me when recipes have a zillion spices in them! Haha! Hey, what can I say? I’m all about keeping things simple when it comes to weeknight dinners. This recipe is definitely one to add to your regular rotation!
One-Pan Chicken Taco Skillet
- 1 pound ground chicken
- 1.5 cups frozen sliced peppers and onions
- 1/2 cup frozen corn
- 12 ounces salsa of choice
- 2 tbsp taco seasoning

In a large skillet, cook ground chicken; breaking it up with a wooden spoon or spatula.

Add taco seasoning and then frozen corn and peppers. Continue to heat until corn and peppers are defrosted.

Add salsa and heat for another few minutes until it is warm.

Serve over rice, cauliflower rice, inside tacos shells/wraps, or with tortilla chips!
