I hope you’re planning to celebrate with all things delicious, but if you’re still looking for a last-minute recipe to enjoy, give this Easy Edamame Guacamole Recipe a go! It’s actually an oldie, but goodie recipe that I’ve made again and again over the years, and it’s one that’s always a crowd-pleaser!

This Edamame Guacamole is loaded with fresh ingredients and plenty of flavor as well as healthy fats and some protein – thanks to the edamame. Let’s just say, this guacamole is better than most, and I hope it makes its way into today’s festivities! 🙂

Easy Edamame Guacamole

  • 1 ripe avocado
  • 1 cup edamame (shelled)
  • 1 lime (juiced)
  • 2 tsp minced garlic
  • 1/3 bunch of cilantro
  • 1/2 cup chopped tomato
  • 1/4 cup chopped onion
  • Salt and pepper to taste
  1. Combine all ingredients in a food processor until smooth
  2. Serve cold with pita chips, tortilla chips, or crackers
