How was your Monday? Mine was really great. I spent the day with Quinn, and we had some really fun adventures together (have I mentioned that I love this age!?!), and even did some baking – look for the recipe for the Pug-Approved Peanut Butter Dog Treats below. He was in such an awesome mood and so well-behaved (he even willingly left an arcade to go home for lunch – usually something like that would cause an epic meltdown), so today was an especially nice day and a wonderful way to start the week.

I also kicked off the week with a healthy day of eats. I had quite the indulgent weekend (holyyyyy sugar and booze), so I’m glad that I’m off on the right foot! 🙂 That said, here’s the next edition of Monday In Meals, where I recap what I ate throughout the day with a few adventures thrown into the mix.

BREAKFAST: Sweet Potato Hash Brown Egg Bake + toast with Kerrygold + iced coffee with coconut creamer and collagen.

After breakfast, Qman and I headed to CrossFit. I worked out while he played with the “tiny kids” in the playroom. I finished the WOD in 18 minutes, which included a string of 11 T2B, but then… I died. The second round pretty much involved all singles (T2B), but, hey, I’m making progress.

POST-WORKOUT: SFH Churro protein shake + a Vanilla Macadamia Nut iced coffee from Coffee Shack that tasted kind of… off. I didn’t try it until I’d buckled Quinn into his car seat and started to drive away, so I only drank about half before tossing the rest. Whomp whomp.

After leaving Coffee Shack, Quinn and I met some friends at an arcade for some fun and games. Related: I shared a bunch of our (arcade) adventures on Instagram Stories today. LUNCH: Liverwurst and greens with steamed okra, white rice, and hot sauce. Liverwurst?! Yep, it’s SO GOOD FOR YOU! Nicole would be so proud! 🙂 FYI: Since I get a lot of questions about Nicole… she’s fantastic, sooooo incredibly smart, and thinks outside the box… I highly recommend her.

SNACK: Forager cashew yogurt mixed with SFH Churro protein, a scoop of creamy almond butter, and Cheerios. I also drank some water mixed with Natural Calm.

Shortly after eating my snack, Quinn woke up from his afternoon nap. Earlier in the day, I noticed that Murphy was out of dog treats, so we decided to make some homemade peanut butter dog treats for him.

The recipe for the peanut butter dog treats was the BEST and EASIEST, so I just had to share! 🙂

Ingredients:

  • 1 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup rolled oats
  • 2 tbsp creamy peanut butter
  • 1 egg
  • 1/4 cup vegetable (or canola) oil
  • 1/4 cup water

Directions: Preheat oven to 400 degrees F. Combine ingredients in a large mixing bowl and then form into a ball of dough. Roll out and shape with a cookie cutter. Place treats onto parchment paper on a baking sheet. Bake for 20 minutes. Remove from oven and allow to cool before serving. Store in an airtight container. (FYI: Our little dog bone cookie cutter made about 2 dozen peanut butter dog treats.)

SNACK: Carrot and celery sticks, aka “focus on what you suck at“. I always get so snack-y before dinner, so I armed myself with veggies!

DINNER: Teriyaki Chicken Drumsticks (from Real Food Slow Cooker Recipes) with peppers, onions, and broccoli over cauliflower rice mixed with white rice. We are obsessed with these drumsticks… so easy, so delicious!

SNACK: Rice cakes with Trader Joe’s fig spread, banana slices, and cinnamon + a mug of eggnog tea + a Beauty Burst (fruity collagen chew).

Question of the Day

When it comes to your diet, what do you “suck at?” 

P.S. Unrelated to anything in this post, but I can’t get enough of the leggings from Zella! I seriously spent way too long on the website shopping around this afternoon, and I cannot decide which ones to purchase. I seriously want like 5 different pairs!!
