Good morning and merry, merry, MERRY Christmas to you!
Over the weekend, Quinn picked “make holiday pancakes” for 24 Days of Togetherness, so we truly embraced the season with a morning full of Christmas cheer. We played holiday music, sipped (iced) coffee with eggnog, and whipped up a big batch of Mal’s very special recipe.
You guys might remember Mal’s amazing cake-like pancake recipe from years past, but this version is the best. It’s also the original recipe. When Mal was a kid, he used to make these pancakes with his dad on Sunday mornings. Now that Quinn is old enough to help, the tradition lives on in our house. And you’ll see in the photos below just how much Mal and Quinn enjoy making pancakes together. It’s really sweet.
Ingredients:
- 2 cups Bisquick
- 1/2 cup Daisy Sour Cream
- 2/3 cup water (splash more if batter is too dry – Mal just eyeballs it)
- 1 large egg
- 1 tbsp canola oil (vegetable oil works too)
- fresh blueberries, holiday sprinkles (optional)
Directions:
1. Combine above ingredients in a large mixing bowl.
Quinn was all about helping “Dada” mix up the batter, and Mal was more than happy to share the pancake-making responsibilities. Quinn poured the Bisquick into the bowl while Mal added the water, egg, and canola oil.
After that, it was time to squeeze in some Daisy Sour Cream. That’s right, no spoon required!
Daisy has a new, easy-to-use package that dispenses their same delicious sour cream with just a squeeze. This, of course, was perfect for our little helper.
It allowed him to participate in the fun of making pancakes without the mess. And less to clean up meant we had more time to enjoy our special morning together!
Once the ingredients were added to the bowl, it was time to mix, mix, mix!
Mixing was easily Quinn’s favorite part about making pancakes!
Dada even made up a fun mixing song that made Quinn crack up! Haha!
And, of course, the pug wasn’t far from the pancake-making action. There was a chance that something could drop on the floor and he was READY for that possibility!
2. Once the batter is mixed, use a 1/4 cup measuring cup to pour it onto a pre-heated, lightly-oiled griddle. (Mal made our pancakes on the Griddler.)
3. Then, if you wish, add fresh blueberries, sprinkles, etc. to pancakes.
Quinn and I were on blueberry duty (blueberry pancakes are his favorite!), so I gave him a blueberry and he would drop it into the pancake on the Griddler. He thought it was so fun!
4. Cook on medium-low heat and flip ounce.
5. Serve immediately with syrup, jam, nut butter, and/or fresh fruit. Recipe makes 12-14 pancakes.
As expected, Quinn loved the blueberry pancakes and gobbled them right up!
We joked that the pancakes with sprinkles and maple syrup were “Buddy the Elf” pancakes. ‘Tis the season!
