One month from today, Mal and I will be on vacation! We’re taking a week-long cruise with friends to Cozumel, Belize, Honduras, and the Cayman Islands. Woohoo!

I’m planning to take a true vacation and not blog at all on the cruise, but I also don’t want to leave CNC dead for an entire week. I’m planning some posts and giveaways to publish ahead of time, but I’d also like to throw some guest posts into the mix. This is where you guys come in!

Breakfast was a repeat of yesterday’s “Oatmeal” Minus the Oats. I planned to switch it up this morning, but I just had a huge craving for this breakfast. On the side: iced coffee with Sol sunflower beverage.

I know you love CrossFit and a lot of people do the Paleo diet along with it. Are you eating Paleo now?
No, I’m not. I actually never was since I’ve been eating grains all along. There are aspects of the Paleo diet that I really like, such as the emphasis on whole foods, fruits and veggies, and quality sources of protein and fat, which I’ve incorporated more into my diet since starting CrossFit. But, when it comes down to it, I love oatmeal, cheese, and beer way too much to ever give them up!
I’ve made your Oatmeal Minus the Oats several times and love it!! I do have a question though. Every time I’ve made it, some sticks like crazy to the bottom of the pot and I have a very hard time cleaning the pot. Has this happened to you? What am I doing wrong?
Yep, it happens to me, too! To prevent it, I turn the heat on low on the pot, spray it with non-stick cooking spray, and then start adding the ingredients for my Oatmeal Minus the Oats as it heats up. When everything is all set, I’ll turn the heat up to medium and stir like crazy to mix things up and further prevent it from sticking. I still get a little stick-age, but not too bad!
How did you become a full-time blogger? Do you have any advice for making it a career?
Well, it was quite the journey (lots of blood, sweat, and tears), but definitely worth it! I love my job! Here’s the whole story start to finish.
As for advice, I started typing up my ideas, but my response got really long, so I decided to turn it into a separate blog post. A few of my favorite blog buddies also contributed some ideas, so please check it out!
