I'm Tina

I’m the owner of Carrots ‘N’ Cake as well as a Certified Nutrition Coach and Functional Diagnostic Nutrition Practitioner (FDN-P). I use macros and functional nutrition to help women find balance within their diets while achieving their body composition goals.


An in-depth, 4-week reverse dieting course for women who feel like their metabolism has slowed down, think they might have hormonal imbalance and can’t lose weight no matter what they do.

Check out what Mal did to our fireplace yesterday afternoon!

Really nice, right? I like it so much better than before (pictured below). It’s amazing what a coat of paint can do!

A couple of hours before dinner, I wanted a snack, so I ate some Pretzel Crisps and then shared a carton of pineapple-flavored coconut water with Mal.



Dinner was a good one!

(Did you know my dog was spoiled? Murphy had a bite of freshly grilled chicken before even Mal or I did!)

My friend Lindsay at Whole Foods hooked me up with some cherries, so I made one of their chicken dishes with them: Brown Rice Salad with Cherries & Chicken. But, instead of brown rice, I used Israeli couscous, which turned out amazingly!

I had no idea how delicious cherries would be in a dish like this. I can’t wait to eat the leftovers!

For dessert, I whipped up a batch of banana soft serve with dark chocolate and sliced almonds mixed in. Holy yum! Why don’t I eat this every day?!?

Now that it’s officially the second half of 2012, I thought I should review my goals for 2012 and see how I’m doing on them. Thanks for the idea, Monica!

My goals for 2012:

  • Run a sub 24-minute 5K – Working on it. I need to register for a 5K.
  • Redo my officeCheck!
  • Fix the fence in our backyardCheck!
  • Do three unassisted pull-ups – Check!
  • Complete the NASM Fitness Nutrition Specialist certification – I need to get moving on this one.
  • Run more than 735.62 miles – Considering it’s July 3rd and I’m only at 235 miles, I don’t think this one is going to happen, which I’m totally okay with. Goals change!
  • Read and comment on at least 3 blogs each day – I haven’t been commenting on 3 blogs every day, but I’ve been commenting more in general. I need to step it up!
  • Prescribed Fran – I’m getting closer!

    What changed in the before and after pictures? I think they look the same.

      Ummmm….the fireplace is now white & it looks like it was unpainted brick before. Ha!

  3. I just saw something that said the true half-way point is tonighth at midnight. Close enough though-right?
    PS that pretzel flavor is addicting. A co-worker had those on her desk and I kept dropping by!

  4. Mal did such a GREAT job on the fireplace. It looks amazing! I have been an avid reader of yours for quite sometime, and just wanted to tell you Murphy is beyond adorable!! I wish we lived closer so our doggies could play!!

    Such a smart idea about adding cherries to a chicken dish. I never would’ve thought to do that!

    –The biggest achievement so far this year was finishing my first half marathon.

  5. Awesome job on the pull ups! I’m working towards that as well . I feel like I just need to practice the move itself more often – my mind/body connection doesn’t seem to be there even though I think my strength is close.

  6. Nice going on the goals, Tina :)! One of my fitness-related ones was to strength train regularly and I have more than achieved it, and I’m pretty sure it’s only going to get better in the 2nd half of the year!

  7. 1. I think that your fireplace looks awesome! Not only do you cook/workout like I like to cook/workout but you freaking decorate in a style I love too.

    3. I love banana soft serve but I never make it because I’m too lazy to put together the food processor/clean it/put it away

    4. I think it’s awesome that you make mini goals for yourself each month. Mini goals make it OK to not meet all of them but they give you something to work towards all the time.

  8. the fireplace looks great. paint can solve lots of issues! my (older, fixer upper) house has a coat of paint on nearly every surface. it’s worked wonders. i can see why murphy is spoiled…that pouty lip is just irresistible!

    great job on your goals too!! i’ve been inspired and have been working towards my own goals this year too!! i did my first 5K ever, and am signed up for 2 more, and i’m finally going to take the plunge and try out cross fit next week!! eeek!! i’m nervous but wicked excited!!

    I found your blog a couple of months ago and I love it! I read it every day 🙂 I don’t really have a list of goals for 2012, but I did set a goal back in February of this year to be fit by my 30th birthday! I have lost 20 lbs and workout about 5 days a week and I feel great! Best shape of my life! 🙂 Thanks for an awesome and encouraging healthy blog. I can’t wait to try the banana soft serve — going to make that tonight! And your dog is hilarious 🙂 Have a great Tuesday!


  11. Woohooo! Run a sub 24 5k! You can do it! I love your new fireplace! It looks so fresh and pristine. My goals this year is to get through the two week introduction foundations course at cross fit, run my first half marathon, loose my pesky 10lbs, continue on the Paleo Diet, Try to do one pull-up without dying, and enjoying Chicago before I go off to Brussels next Winter to intern at the European Union Parliament!   12. The fireplace looks great! We’re thinking of doing the same thing to ours. What kind of paint did you use? Was it a special high heat paint? How many coats did it take and did you have it sand it before hand? Thanks 🙂

  13. My biggest fitness goals this year were to run my first half marathon and my first marathon! I’ve done a half marathon and another in a couple weeks and I’m on week 5 of training for the Chicago Marathon! Going well so far!

  14. I had to actually go look at my blog to see what my 2012 goals had been. LoL. I’m working on the first marathon and I’m registered for a mud run (2 goals). I don’t know if I will hit 300 miles run this year or not (maybe as marathon training amps up?). I haven’t made headway at all on losing the 5% body fat or doing 5 pull ups. Gotta get on that!!

  15. I noticed one of your 2012 goals is to get your NASM Fitness Nutrition Specialist certification. I know you got the PT cert. last year and I think that’s great! However, how do you think you’ll use these 2 certifications? I would love to see more blog posts on different types of exercise and the science and mechanics behind them (ie., how to do them and why they’re beneficial) I think your PT certification would qualify you to write knowledgeably on that. As would the Nutrition certification allow you to write on nutrition when you get that. Are you getting these certifications merely for personal gain, or to share with your readers? I’ve noticed that when it comes to exercise, you primarily write about CrossFit since you started that. Although I think it’s awesome you’ve found CrossFit, because you obviously love it, I think the fact that most of your exercise based posts are about CrossFit is a little alienating to some of your long-time readers. I really like your blog, but I find myself reading a lot less because I don’t do CrossFit.

    1. Yep, they’re for personal knowledge and to use on the blog. When I was studying for the NASM exam, I wrote about what I was learning quite a lot (you can read my posts here: http://carrotsncake.com/tag/nasm), so I plan to write about what I learn for the FNS certification as well.

      As far as CrossFit, I’m sorry you don’t enjoying reading about it on CNC, but my blog has always been about “sharing my life one bite at a time,” which, of course, includes CrossFit. Maybe you can just skip those posts?

  16. Yowzers… I haven even reviewed my goals for the year yet…yikes! Thanks for the reminder. That soft serve looks awesome too…try adding frozen cherries and cocoa to the mix…my new fav!

  17. I have cherries at home, and I love that salad idea! Yum!!! I’m a little behind on my running goal as well. Because I’ve been doing more strength types of training! So that’s okay by me as well.

  18. So far, I have run a race every month this year. Tomorrow is the Peachtree, August is a half, September is a half and then October is a marathon. I also decided to see how long I can keep my running streak going. I had my son last August, so I wanted this year to be about getting back into top running form. I ran up until the day I delivered him but I was not quite as fast toward the end!

    Speaking of CrossFit, I read this great article on Libby DiBaise this morning. She is in the month’s issue of Fitness Rx for Women.


  19. Good idea! I’ve signed up for my first half-marathon, which I’m pretty excited about. The race isn’t until October but I’ve already started training as I’m prone to shin splints/stress fractures so I need to take it easy and build up my mileage really slow. On a non-fitness front, I’ve also been trying to try new things and approach everything with an open mind. I’ve taken the attitude that I’m young & that these are the best years of my life (I’m turning 24 this summer) and that I want to get as much in now while I’m young, including travel, spending time with friends, and just doing whatever!

  20. You’ll get Fran before you know it. I started Crossfit around the same time as you and I just did my first RX Fran last weekend. Just ditch the band for the pullups once and for all and DON’T GO BACK! Force yourself to do real pullups–even if it’s sets of one or two. I was doing single pullups by the end but I did it and I was so proud. So what if my first RX Fran took me just over 10 minutes (drat!)…at least I have a TON of room for improvement.

    1. @Michelle: and to add…ditching the pullup band is such a confidence booster. My times are slower on workouts with pullups, but the mental game you have to play to get yourself back up on the bar to knock out a few at a time instead of unbroken sets with a band is huge. Do it!

  21. Banana soft serve is my FAVORITE. I just wish it was more common in stores so I didn’t have to make it all the time. The dark chocolate and almonds sound like a great add-in. I’ll try that next time. Your fireplace looks great!! Have a good holiday!

  23. Holy veins, Mal! I’m a nurse and my eyes about popped out of my head when I saw the picture of him feeding Murphy. If only my patients had veins like that! Also, I’m hopping on the banana soft serve train today. Last time I froze bananas, I forgot to peel them first so this time will work out a little better. 😉

  24. I love setting goals, just love it. Especially when I write down my goals and then when I get to cross it off the list because I accomplished it! Best feeling in the WORLD! Sometimes I just make lists of things just so I can cross them off, crazy I know, but I just love marking it off as done!

    I had every intention to make a nice long list of goals at the beginning of this year but never did it. I made 1 single goal for 2012 and that is to run minimum of 600 miles this year… I am at 289 miles currently… I should be able to make it to 600 by Dec 31st! ::fingers crossed::

  25. Ah, ha, ha…HILARIOUS picture of pouty Murphy. I thought of him today, someone sent me a photo of a “pug wearing pug slippers”. (the dog’s front paws were in baby slippers that were pugs) You’d love it… Have a great day Tina.

  27. I’ve been loving couscous! It’s so easy to cook and so fluffy~Had it with dinner last night and this mornin’. 😀 I can’t wait to make my own israeli couscous now! I don’t know if I’ve tried it, but is it really chewy? It looks like it in the pic.

  29. I did a mid year goal re-evaluation. There were some goals that I achieved so I wanted something new to go after. There were also some that I wasn’t interested in anymore so I moved on to better ones.

  30. New reader since stumbling upon CNC via the blogroll of another favorite blog, I’ve really been enjoying your posts – thanks for all the hard work you put into this! Just adding my 2 cents in — I’ve never done CrossFit, actually had never heard of it before reading CNC and that doesn’t affect my enjoyment of reading this blog. Working out is working out to me, and it’s just always nice to read about how others go about their way of keeping fit, whatever that may be. I do know that if I ever have the opportunity to get into CrossFit, I will be much more familiar and comfortable with it.

  31. I love the fireplace. I did something similar over at my father’s house for his FP. I ended up changing the brass/black details though. I just sprayed the doors and frame an Oil Rubbed Bronze spray from Rustoleum and painted the brick in the fireplace black since it always just gets black anyway.

    Your FP looks beautiful. I love the turquoise accent pieces on the mantel!

  32. I haven’t achieved my goal yet for 2012 but I plan to before the end of the year. It’s a certification for my profession called PHR (it’s a Human Resources certification).

    Thank you for reminding me to try banana soft serve! I’ve read about it on various blogs and when I read your post I remembered I had a banana in the freezer. I just made it and OMG….too delicious!!! I will definitely be making this a lot!
