Apparently, I am still recovering from the weekend because I totally slept through my alarm this morning. I set it for 4:45 AM like I do every Tuesday night, but I guess I shut it off when I was only half awake this morning, so I missed running with Back on My Feet. Wicked bummer. I can’t make it to next Wednesday’s BOMF run, so I’m going to go this Friday instead.

Last Night’s Dinner

Last night’s dinner was inspired by a recipe from the April issue of Health magazine: Orzo with Shrimp and Tiny Peas. I didn’t have any shrimp on hand, so I roasted some chickpeas and threw them in with the orzo instead. It worked like a charm. On the side, I had a salad topped with goat cheese, flax oil, and balsamic vinegar.

Breakfast

This morning’s breakfast was an oldie, but goodie: whole wheat toast with peanut butter and banana”” and, of course, an iced coffee with soy milk.

Lunch

Today’s lunch was eaten in two parts. I started with a turkey and Swiss cheese quesadilla. I placed turkey, Swiss slices, and honey mustard inside a whole wheat wrap and cooked it in the toasted oven until the cheese was melted.

A little while later, I still wanted something more to eat, so I made myself a salad. I also ate a few handfuls of chocolate chips (because I need something sweet after every meal).

Feel Great Weight

For Mother’s Day this year, my sister and I treated my mom to a late lunch at the Melting Pot. The Melting Pot specializes in cheese and chocolate fondue, so dining there is quite an indulgent experience and neither low calorie nor low fat. I enjoy indulging on these occasions, but, at the same time, I also like to keep my calories in check. I want my jeans to fit after all!

The Melting Pot offered a four-course menu for Mother’s Day, which meant that I also needed to pace myself through the multiple courses without overdoing it.
