One of my favorite recipes in my book is for Banana Oatmeal Chocolate Chip Cookies. They’re so delicious, it’s hard to believe that they’re somewhat nutritious!

I wanted to bake a batch of them for Cookie Friday, but I didn’t have all of the ingredients, so I improvised and made a whole different cookie.

Ingredients:

  • 1/2 cup whole wheat flour
  • 1 cup oats
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 2 tbsp ground flaxseed meal
  • 2 tbsp chia seeds
  • 1/4 cup maple syrup
  • 1/4 cup soy milk
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut butter, melted
  • 1 ripe banana
  • 1/2 cup chocolate chips
  • Pinch of salt

Directions:

  • Preheat oven to 350*F.
  • Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
  • Roll batter into balls and then flatten on a greased baking sheet.
  • Bake cookies for 15 minutes.
  • Remove cookies from oven and allow to cool on wire rack.
  • Eat and enjoy!

Makes 9 large cookies

Because these cookies are so thick and hearty, I only ended up eating one. Usually, I ended up eating practically half of the batch, but these cookies have a lot of substance. The chocolate chips and maple syrup add just the right amount of sweetness without going overboard. The mashed banana and melted coconut butter combine to give the cookies a medium-firm texture, which is just the way I like them!
