Writing went pretty well this afternoon. I wrote a good amount, but the words weren’t necessarily flowing, ya know? But, something is better than nothing, especially at this point in the game! Yikes! 😯
Starbucks seems like it will be a good place to write in the afternoons… at least for now. Plus, it has coffee and cookies, so at least I’ll be comfortable there! 😉
Dinner
I didn’t have anything planned for dinner, so I just winged-it in the kitchen tonight. Usually, I have our meals (roughly) planned for the week, but I didn’t get my act together this time.
I used a couple of meat-free Tuscan Breasts for the basis of this evening’s meal. (I love the Gardein products– they make great meal starters!)
To prepare dinner, I started by boiling some whole wheat elbow pasta. Meanwhile, I chopped some carrots, red onions (the only veggies in our kitchen), and then the two Tuscan Breasts.
Once I drained the pasta, I mixed everything together and added a little marinara sauce. Then, I topped it with a mixture of bread crumbs and grated Parmesan. Finally, I popped the whole thing in the oven for 15 minutes until the top began to brown.
It smelled so good!
Mmm! This was such a wonderful meal! Mal liked it so much, he ended up eating two huge servings. I actually think he ate the rest of it! He’s a growing boy! 😉
Dessert
For dessert, I enjoyed my favorite dessert X 2. So good! It never gets old!
