I woke up bright and early at 7:00 AM to get ahead start on everything that I need to accomplish this weekend. I swear, I never have a dull weekend anymore! And, from now until the fall, it just gets busier! Northerners know just what I am talking about– we need to take full advantage of the nice weather before it gets cold again, so every weekend is jam-packed with fun, outdoorsy stuff. It’s crazy, but such a blast! I can’t wait for spring/summer!
Today is gray and sort of rainy, but I can see the sun trying to break through the clouds. I have my long run planned for today (8 miles), so I hope it starts to clear up soon. After my run, Mr. Mal and I are off to the outlets to take advantage of a sweet coupon that I recently received from Banana Republic. 😉 Later this afternoon, we have a BBQ/housewarming party. And Sunday starts with a 6-mile walk and finishes with getting together with friends and enjoying the sunny 60 degree weather! I think we are planning a game of wiffle ball! 😀

This morning’s breakfast was a big bowl of oats with pecans, raisins, ground flaxseed meal, soy milk, and peanut butter– good fuel for my run!

Friday’s Dinner
After a long week, I didn’t want to put too much effort into cooking dinner… I just wanted to eat it! I whipped up an easy egg white pita sandwich with mushrooms, tomatoes, and a slice of bacon for dinner. It was so fast and easy to make, and perfect for a lazy night!
And, of course, I wasn’t too lazy to make a delicious treat for dessert. I enjoyed two of these while catching up with my DVRed episodes of Oprah! 😉
Dean’s Tea
The Dean’s Tea went great! (Thank God!) We had 25 students come to the Dean’s home for tea and everyone seemed to have a nice time. I took a few photos of the event preparation, but I didn’t take any during the tea. I was too busy greeting students and mingling. Plus, I’m not sure how the students would have felt about their photo ending up on a food blog!

For the event, we served mini-pastries and tea sandwiches, which were gobbled up by the hungry undergrads. They ate almost everything, which was great because I’m always so worried about ordering too much food and having it go to waste. But, of course, you never want to have too little and run out!
