Are there some avocado toast lovers out there? I mean, who doesn’t LOVE avocado toast, right? It’s one of my favorite meals and snacks because it’s so darn delicious and easy to make, but also because the ingredients are simple (just bread + mashed avocado) and the pairing possibilities are endless!
If you need another reason to enjoy this tasty toast, avocados are an important part of a healthy diet. They are nutrient-dense with nearly 20 vitamins, minerals and phytonutrients, and they act as a “nutrient booster” by helping the body to better absorb fat-soluble nutrients, such as alpha- and beta-carotene and lutein, from foods that are eaten with the fruit. (Yes, that’s right, an avocado is a fruit!) Additionally, avocados contain eight percent of the daily value of fiber per serving. Diets rich in foods containing fiber have been found to potentially reduce the risk of type 2 diabetes. Fiber also adds bulk to a sensible diet, which helps provide a feeling of fullness. Along the same lines, naturally good fats found in avocados help you feel full and stay satisfied for hours. Avocados contain naturally good monounsaturated fat and are cholesterol free. Over 75% of the fat in avocados is unsaturated (monounsaturated and polyunsaturated fats), which makes them a great substitute for foods high in saturated fat.
As you can see, avocados are a wonderfully nutritious addition to one’s diet, so now let’s talk about some delicious ways to add some variety to our beloved avocado toast. Here are 15 ideas that use simple ingredients to help you mix things up!
1. Sliced tomato/crumbled feta/freshly ground pepper
2. Sliced hard-boiled egg/sea salt/freshly ground pepper/hot sauce
3. Pesto/shredded chicken/Parmesan
4. Chopped dates/pumpkin seeds/cinnamon
5. Sliced cucumbers/sea salt
6. Sliced strawberries/balsamic vinegar
7. Banana slices/walnuts/sunflower seeds

My go-to is a tomato with red pepper flakes and S&P. But I love the idea of adding a date. Yum!
I will be trying these! Such good ideas! My favorite is avocado topped with a runny egg, sea salt and red pepper chili flakes. So good on Ezekiel bread!
I love adding an egg but I always go to just plain avocado toast with black pepper…so simple, yet, so yummy! Great combos!!

Oh man, I LOVE avocado toast! While I was half marathon training, my pre-long run dinner was actually plantain bread with ½ mashed avocado, 2 over easy eggs and sometimes even a drizzle of tahini…oh man, my mouth waters at the thought!!
I’ve never actually made it myself, but my favorite is the Avocado Toast at Granger and Co. in London. It’s just really good bread, avocado, and lime.

Just bought a bag of avocados so I will be trying all these recipes 😉 I recently made a grilled cheese with an avocado/onion/olive oil spread. SO good!

I love an egg over-easy, fresh lemon juice, and sriracha on top of mine!
I make avocado toast with lemon ricotta, a slice of turkey bacon a hard boiled egg on top!

Avocados are by far one of my favorite foods. There’s really nothing as versatile as guac; it’s perfect for all three meals. My dream is to live somewhere where I have my own avocado tree. It would certainly cut down on grocery bills 🙂
Avo toast!!! I Just picked up some Dave’s Killer Bread (per your blog post recc the other day! I got the thin slice seeded and it is awesome). So the last few days for breakfast I have been making some avo toast with that, plus a sprinkle of sea salt, garlic power and red pepper flakes and an over-easy egg on top.
